I would peel them and puree in a blender and use in place of oil (a la applesauce) in a baking recipe  :)

puree, add sweetener to taste and freeze = sorbet!

thank you for everyone who replied!
i really want to make that plum cake, but i have no flour, and the only place i can get it is at the mini mart on campus and they only sell white flour which is definitely a no no for me...

im thinking i will make either a sort of plum cobbler, or plum butter...

Plum butter rocks. And if you have an apple or a couple pears on hand that are getting tired in the crisper, chop them and toss them in and it will get thick quicker. Clove, cinnamon, touch of ginger....lovely.

That plum cake of yours was delicious, yabbitgirl!  I made it a few months back and it was devoured and admired:)  I highly recommend that recipe to anyone fortunate enough to have an overload of delicious ripe plums :)

Lol at plum butter

Why? I often "recycle" fruits that are past their best by chopping apples, pears, plums or any combination thereof and cooking down with a splash of white wine, cinnamon, ginger and clove, and a bit of sugar. When reduced to a true "fruit butter" they will keep a LONG time, covered in a glass jar in the fridge. And they are delicious, on toast or just eaten out of a dish with a spoon.

I meant it sounds funny. Like the name of some really funky lube. Okay, that's gross, but thats what my mind goes to.
