Well, I'm not sure if Jenn Shagrin, the author of brand new vegan cookbook, Veganize This!: From Surf & Turf to Ice-Cream Pie--200 Animal-Free Recipes for People Who Love to Eat (http://www.amazon.com/Veganize-This-Ice-Cream-Pie-200-Animal-Free/dp/0738214027), is Italian, but she's definitely awesome. Also, Veganize This! includes a recipe for Quattro Formaggio White Truffle Macaroni and Cheese, and that sounds pretty Italian, right? Ethnicity aside, Jenn and her cookbook are freaking amazing. She's a master of vegan meat and dairy substitutes — her versions will blow your mind. Plus, there's a recipe for Vegan Doritos. Need I say more?

I love lasagna, but it has to be really saucy, with lots of ooey-gooey etc. and loads of garlic bread.
I'm addicted to vegan lasagna with kale and spinach...and now that I can find Daiya cheese in my area, it's even tastier than ever. Yum!

Anyway...I would say my favorite Italian Recipe would be Lasagna as will...Cheesy and saucy and yummy...especially with garlic bread...yum, I'm hungry now.
Vegan Pizza! Brown Rice crust topped with crushed tomatoes, mushrooms, onions, and a variety of peppers! YUM!
Ravioli! I LOVE ravioli! Especially those creative kinds like butternut squash and mushroom.
Vegan spinach lasagna OR pizza with Daiya cheese spinach, sundried tomatoes, and red onions, & green or black olives!

My own special lasagna using a tofu mixture as ricotta, zucchini as noodles, and my own marinara sauce with my brilliant bruschetta on the side.

Wow, I can only pick ONE italian dish?! I absolutely LOVE italian food, has been my fave since I was a kid...pizza is always yummy, but I really love a simple spaghetti with marinara and garlic bread. Oy now I'm drooling! ;D
I love most all Italian food, but I think my fave is Eggplant No-Parmigiana.
gnocchi...hands down. a good gnocchi with a 'rustica' sauce of tomatoes, olive oil, onions, some pepper flakes and 'mozzarella cheese.' you absolutely cannot beat it.
Stuffed shells...in my pregan days, my mom's recipe and now my own veganized recipe!
OMG, vegan Doritos recipe?! I have been needing this. I was going to say that my fav Italian recipe is broccoli Alfredo, but if you can envision vegan Doritos as Italian, I think I'd go with that! :D

Eggplant "Parmesan"!!! I've been wanting to make some but I can't find any good eggplants this time of year.
Ok, lasagna was a childhood (and adult) favorite always. However, a couple years ago my family went to this very nice and pricey Italian restaurant for my brother's graduation and I had the best meal ever. I still remember everything about it which is odd for me. It was fresh pasta with sauteed mushrooms in olive oil, garlic and salt with argula (the argula wasn't cooked). It was simple but absolutely one of the best meals I have ever had. And the only veg item not covered in cheese! And I'm not even a huge fan of mushrooms except for the occasional shiitake that I force myself to eat in miso soup. I've been trying to recreate it but its never the same when you cook for yourself.
