My best friend is allergic to walnuts. I have another friend who can't touch gluten or she breaks out in hives. I have yet another friend who so much as looks at a peanut and his throat starts to close-up. Allergies range from simply annoying to seriously dangerous, and I want to bake for my friends, without the threat of seriously injuring them. This is way too simple to really mean much, but one of my favorite snacks is just a sliced apple (Ambrosia, Opal or Gala).
Baked Potatoes hollowed out and mix of the potato, veg mayo and mustard put in there!
A big delicious salad full of wonderful, fresh, local veggies!

I'm going to say a salad too... my sister calls it my "kitchen-sink" salad because it includes a smorgasboard of veggies, fruits, mushrooms, nuts & seeds...
Brown rice, steamed veggies, drizzled with flax or oil olive. Hearty and clean!

Yet to have allergy problems with a fresh garden salad drizzled with a little balsamic vinegar. Though, I suppose there's someone out there would even have a problem with that. AC has it nailed with a tall glass of O2 though. I like mine with a curly straw.XD
All three of my grands have severe peanut allergies,one is allergic to milk,eggs,peanuts ,shellfish and she has severe excema, so cooking is a big deal at our house!!We eat all vegetarian and my favorite food is my daughters allergy-free chocolate cake!!!!

I used to do a lot of vegan gluten-free baking for a friend that has since moved. It was all good, and I really don't have a favorite. I'm pretty certain I'm allergic to milk, because I used to look like I had a cold everyday of the year until I went vegan. My favorite dairy-free treat would be vegan chocolate turtles with homemade caramel. I just don't make them often, because I eat them. Five of us (only 2 vegans) ate 5 dozen in 2 days once.
I like to bake for people that can't eat dairy and don't realize you can really do anything without it. Soooo, brownies and chocolate chip cookies are good basics.
I also did some gluten-free cooking last year and gave that away too.
