I'll be in Las Vegas this weekend. :D Does anyone have any recommendations for restaurants? There's a few listed on Happy Cow, but I'd love to hear some personal suggestions. Thanks!
Go to Komol!!!!!!!!!!!! http://komolrestaurant.com/ It is AMAZING and minutes from the strip!
Yeah, we eat there a couple of times a year. Yummy. Some people, when they say they aren't leaving the Strip really mean it though.
on the strip i had subway, taco bell, Rubios, and Chipotle... and i snacked a bunch on junk but hey, it was only for a few days :)
Lots of wonderful recos hopfrog. I am creating a list of such restaurants. You made my job easier. Thanks.

There are many new places out there in Vegas. They have the same fun and excitement or can say even more than what other restaurants have.
Las Vegas Happy Hour
I'm going to Vegas in August and am currently looking for options. I don't think I'll be travelling away from the strip much (if at all. not sure of how much time I'll have), so I'm limited! I'm planning on packing some stuff and visiting Subway quite a bit.
Thanks for the link for Komol. It's not far from our hotel, so we might be able to go there!

Every place at the Wynn hotel has vegan options. Quarrygirl has compiled a list of the vegan menus, check them out here: http://www.quarrygirl.com/wp-content/uploads/2010/12/Wynn-and-Encore-Vegan-Menus-as-of-October-2010.pdf

Serio.
Although I'd be willing to blow some cash at least once to try something, that's what Vegas is for ;)
I am sure your trips to Vegas have come and gone, but for next time....
Pura Vida has amazing food. The chef specializes in latin fusion dishes, and deserts (They usually have a several options available). A lot of the menu items are, or can be made gluten-free, also.
Greens and Proteins in Henderson has some tasty vegan options on their menu.
The Bar and Bistro now has a vegan menu, as does Red Velvet, and Elixir.
And of course, there is Go Raw Cafe. :-)
