Denver?

So I had a really great hiking trip planned for my last spring break ever and then I found out that the show I'm in is rehearsing that week. Actually, only the scene I'm in is rehearsing that week. I was really bummed, but then I decided to get on a train and go somewhere I've never been, just for one day. So this morning I reserved a seat on a train to Denver for later next week. I'll arrive at 7 AM and leave the same day at 8 PM. What should I do while I'm there? Any vegan-friendly restaurants I shouldn't miss? I'm super excited.
How are you getting around after you arrive in Denver?
I live in SW Colorado, so I go through Denver occasionally. Next time I do, I am going to eat at Watercourse, a veg restaurant. I called them and they were incredibly nice on the phone, and also said almost everything could be made vegan, if it already wasn't. Other than that, I have no suggestions, as I usually opt for Boulder if I am actually spending time in that area.

How are you getting around after you arrive in Denver?
Walking. I've been looking at maps and finding interesting things within walking distance from the train station.
WATERCOURSE
Near the train station will be the 16th street mall. It is a series of overpriced restaurants and Starbucks and tourists. Really, there's a Starbucks on almost every intersection. I think there should be some decent places to just kind of hang out if you look long enough, especially just outside the mall area.
I prefer going up towards the statehouse - if you walk away from the train station on 16th street, you'll reach the statehouse plaza area. Can't miss it - it's a dome. Sometimes there's something happening.. or there are just "interesting" people hanging around.
It's really too bad you don't have a car because there's Cafe Rebelion - it would be a long walk, crossing I-70 in the process, from downtown otherwise. If you happen to be able to mooch off of anyone to drive you or find your way on the bus, it's worth it for their coffee.
The Denver excursion was awesome. Thanks for the suggestions. I went to City O' City for pizza and had the leftovers for the very long train ride home. Their cheesecake was unfortunate. It tasted like a block of plain tofu with cherry topping, but the pizza really was fab.
