I'm so excited that a dear friend got me a bunch of bags of vegan butterscotch chips for Christmas.
What should I bake with them?

I'm not sure if this is wasting the bounty that is butterscotch chips, but butterscotch chip cookie bars sound really good.

Ooooh, make these cookies using the butterscotch chips instead of chocolate. These are my favorite of all time and everyone goes crazy for them. Luckily I have a cheap supply of accidentally vegan butterscotch chips. :)>>>

THIS!!!! I have searched and searched. I heard that the store brand from either Giant or Food Lion are vegan, but we don't have those chains, here.

The cheapy PriceChopper brand of butterscotch chips is vegan. I couldn't find them anywhere in southern California where I live. The bags I received were special ordered.

I could make those too. I think I have at least 8-10 bags of butterscotch chips. I tried one chocolate chip bar recipe last year and thought it was too oily so I'm searching for a new one.

I have a bag of (non-vegan) butterscotch chips. I got it last spring for a work potluck that asked us to bring foods that represented our heritage. Having no discernible culinary heritage of my own, I created a homemade version of a Philadelphia (my hometown) favorite: butterscotch krimpets.
Basically it's pound cake with butterscotch frosting. If you could veganize it, it would help get rid of some of the chips.
