Suggestions for side item for tofu scramble?

I love to eat tofu scramble for breakfast, but it needs something on the side. I usually do a bread thing, like buscuits or banana bread or something like that. It seems that tofu bacon would be overwhelming in the tofu department. What do you think? Good side dish? Maybe some cut up fruit?
I find it very tasty in a tortilla with salsa and/or avocado. Sometimes I wrap them, then bake them for 10 minutes or so until they are crispy and hold their shape. Then I can eat them out of my hand while I'm running around.
Otherwise, yeah, fruit goes with any breakfast, in my opinion.
Or maybe hash browns?
I rarely eat this for breakfast...usually for dinner. I like to pair it with diced potatoes and sometimes tempeh bacon...it's still soy, but different, you know?
we like to have home fries with ours. usually we mix it all together, but it would be good seperate too.

I love to mix cut up fruit with soy yogurt for breakfast. If you're having it for breakfast, that seems perfect. Cubes of fresh watermelon in a bowl with some strawberry soy yogurt is delectable! My roommate thinks it's weird, but I LOVE it! I do it with everything... sliced apples, canned peaches/pairs, strawberries... It's yummy :chinup:
Do you add tomatoes to your tofu scramble? If not, then a side dish that I like to make is gently fried onion and tomato, adding some basil and garlic salt and cook it until it is really reduced down a bit - until it is a little bit mushy. This is really nice on its own or served on toast.

to me, it doesn't takste tofu-ey at all. but i can see what you mean about EVERYTHING being tofu and all. so i'm going to have to go with everyone else's suggestions of potatoes. When i was little, my favorite breakfast was tiny little cubed potatoes pan-fried, then i'd dip them in ketchup.
I like sauteed greens or wilted spinach with tomatoes, garlic, chili flakes, etc. alongside my scrambled tofu. I'm not a fan of sweets (even fruit, most days!) in the morning, so i tend to load up on the veggies in the morning.
I like sliced tomatoes and an english muffin or sometimes biscuits and gravy with soysage.
I love some hashbrowns with a scramble. Makes me feel like I am having a big restaurant breakfast. Plus, it keeps you full for a long time. Greens sound good too, though (and healthy).
Potatoes are an excellent side. If you are interested in bacon or sausage I would recommend seitan bacon or sausage.
Something a bit less traditional, beans with diced onions and bell peppers served with avocado.
My first thought was breakfast potatoes. I make fantastic home fries with just a little oil, new potatoes, and onions.
However, sharway's and Carriejane's posts reminded me of my favorite breakfast side of all time--roasted tomatoes. All you need is tomatoes and a little S&P (plus any herb you might want to add), and just a drizzle of oil on top. Bake till somewhat deflated.
I got hooked on them when traveling in Europe--England in particular, plus any hotel breakfast that was trying to accommodate to a variety of breakfast tastes. I've had them very occasionally in the US too, but it's much rarer (and many times they're just fresh instead.)

Yes! The best breakfast! A slice of whole wheat toast, "butter"ed with EB, sprinkled with salt and pepper, alongside the roasted tomatoes and some sauteed mushrooms. Mmmmmm, the best brekkie!!

Some really good ideas. I didn't have regular potatoes but I remembered that I had a sweet potato in the fridge that needed to be eaten. I cooked that in the microwave, added EB and brown sugar to the top of it after I cut it open and mashed it with a fork, then had tofu scramble with it. Ummmm, the two tastes seem to really compliment eachother. I want to try the tomato thing next time. I love tomatoes.
