Slow cooker recipe for Pot Luck dinner

I have a ginormous slow cooker and a pot luck dinner to attend next Friday. The miscellaneous slow cooker section is lacking a little so I'm wondering if anyone has an awesome vegan recipe that they would like to share that's not listed in recipes?
Also, would it be possible to make a casserole recipe in a slow cooker?

Make a lot, because a slow cooker needs to be filled 1/2 to 3/4 full to function properly. Try curried lentils or spiced apple sauce. Between the two I'd go for the lentils, because that's a lot of apples.

My household is addicted to this recipe, we make it a minimum of two or three times a week. It isn't spicy (I hate spicy!) but it has a lovely flavorful taste.
I've made Yummy Lentils & Spinach (http://vegweb.com/index.php?topic=15546.0) in the crock, & it turned out great-- & pretty, if you use fresh chopped spinach & toss it in like 30 minutes before serving. Works as a stew without rice, if you use 1 c. lentils/ 3 c. water... doubles easily to serve a lot of people. A lot of my crock cooking is winging it, but I'll keep thinkin'.... I probl'ly have some actual recipes somewhere that I could vouch for; will post again if I think of any more.
My favorite things to make in the slow cooker are dahl and red beans n rice (although you'd have to have the rice on the side). I make up my own dahl recipe, but there are several on this site. I use this recipe for red beans n rice (scroll to the bottom for the veg version, and check your worcestershire sauce for anchovies, or sub something else like soy sauce). http://www.gumbopages.com/food/red-beans.html
I know my mom has made casseroles in the slow cooker (meat and cheese filled crap, but still casseroles), but I don't know of any specific recipes. You could try adapting a casserole recipe, but I'd be worried that it would burn on the edges and not cook in the middle.
I second yummy lentils & spinach! even my picky omni dad liked it and that is saying a lot!!
