Yummy Lentils and Spinach

Ingredients (use vegan versions):

    3/4 cup lentils
    5 cups water
    3 tablespoons of olive oil
    1 large garlic clove, minced or pressed
    1/4 teaspoon red pepper flakes (more or less to taste)
    1 can chopped tomatoes
    juice of half a lemon (more or less to taste)
    1 handful or 2 of baby spinach
    1 1/2 teaspoons of salt (more or less to taste)

Directions:

Wash lentils.  Place lentils and water in a large saucepan.  Bring water to a full boil, then lower the heat to medium and cook, covered, for twenty minutes.  Reduce heat to low.  Stir in the olive oil, garlic, tomatoes, salt, and pepper flakes.  Cover the pot, and simmer for 10 to 15 minutes, stirring occasionally.  Add spinach, cook 1 or 2 minutes more until spinach is just wilted.  Add lemon juice. Remove from heat.  Serve with rice.

Serves: 4

Preparation time: about 1 hour

This was pretty yummy!  I used 4 cups of water and 1 cup of lentils and an extra handful of spinach leaves instead and it was still a bit soupy -- but not super watery.  I just used a straining spoon to serve.  I didn't measure my salt, and I think I added a little too much, but not so much so that it was ruined.  Yum!

My son and I both enjoyed this.  I also used a bit less water and more lentils (2 cups of lentils, 7 cups of water) and I drained the tomatoes before adding them.  I'll make this again!   Roll Eyes

Yummy indeed! I did have to add a lot of stuff, though, so I'd venture to guess that the recipe as is would be pretty bland. I used two low-sodium bouillon cubes added to the water, extra garlic, onion powder, black pepper, a 6 oz bag of baby spinach, and I didn't drain the tomatoes. As is, it is incredibly soupy, so for your average person I'd recommend cutting down to maybe 3 cups water. For broth-lovers like me, though, just drain most of the liquid and drink...yummmmm. After the specified cooking time, my lentils were still crunchy, so test them first. I forgot to add the lemon, and I didn't think it needed it, although I might give it a try next time. I'll also try sauteeing chopped onion and garlic and adding it to the mix, plus maybe a bay leaf while cooking and some liquid aminos. All in all, really good, really yummy, really healthy - can't lose! (P.S. I ate it straight - no rice needed.)

this was really good. i just added water a little more than to cover the beans.  Added an extra clove of garlic b/c i loooove garlic so.  I didn't have any tomatoes on hand but the dish was delish without. thanks.

Oh my gosh! I made this last night for dinner. It is one of my new favorite recipes! I served it with brown rice but not really over the rice, more like I put some brown rice in the soupy mixture after the rice was cooked. I love it! I ate way more than my fair portion. Definitely will be making this on a regular basis.

OUTSTANDING!!!!  Cheesy  You can do alot of variations with this recipe! I sauted lots of onions and garlic and then added 2 cups of veggie broth, omitted the tomatoes and added french herbs, garlic powder, onion powder, cayenne pepper and the red pepper flakes. I then tossed in a bag of spinach. I eat it with some yummy Pita Break flat bread crackers!

While it can be enjoyed any time of the day, I find its the perfect pre-workout meal!

haven't tasted it yet -- it's cooking -- but I can say right now you need to use a big pot!  I put only three cups of water in with my lentils, in my biggest saucepan (2qt), and half the water bubbled out onto my range!  Sad  I hope the lentils turn out okay... I've never cooked them before.

Delicious and easy.  This is going into heavy rotation with me.  The bottom lentils burned because of the lack of water, from the situation I described above, but that didn't affect the taste -- or maybe it even improved it a little.  To make up for the lack of moisture, I added all the juice from the can of tomatoes, along with about 1/3 cup water.  It was soupy enough after that for me to break out the ladle to serve.  It was really, REALLY tasty, and so easy!  And I COMPLETELY FORGOT the GARLIC!  I was shocked when I realized this, since I had been enjoying the flavor so much.  I had been intending to double the garlic, because I'm a fiend for the stuff, but even without it this made a great dinner.  It will tomorrow, too; yay leftovers.

For something so simple, this is ridiculously delicious.  I did modify the recipe a bit....I just used a can of lentils and heated those up with the tomatoes.  I sautéed onions, garlic, and spinach and added this to the lentils and heated through.  Then I served it over rice that I had cooked in broth.  Deeeelish.  Also pretty, I should have taken a picture but I couldn't wait to eat it!

This was very good.  I used the recommend amount of water but a cup of lentils, it was a bit watery, may want to use less water next time, and I added more spinach.

But it was a tad bland so instead of using lemon juice I added apple cider vineger and hot sauce, that spiced it up great!  It was delicious.

This was great! I had some extra veggies I needed to use, so I added them. Before cooking the lentils, I cooked an onion, 4 small red potatoes, some zucchini, carrots, and green onions. I added the water and lentils after they cooked for a while and then followed the directions. I also used one cup of lentils and 4 cups of water. When I added the tomatoes, I added a can of chick peas.

My husband and I really liked this recipe.  I didn't want it to be soupy, so I used 1 cup of lentils and only 3 cups of water (and no liquid from can of tomatoes).  It was still slightly soupy, so I'll probably try just 2 cups of water next time.  I also used an entire bag of baby spinach, and 2 cloves of garlic instead of 1.   Will probably use more salt and red pepper flakes next time.  This one is definitely going into our rotation though!
