Seitan - Freezing Guidance

I'm about to embark on a new adventure of making my own seitan. Gluten powder here is about $1.50 a pound, while readymade seitan in the cold case is like $4 a pound...do the math. I've surfed a lot of the recipes etc. on the site and they look good, but I have a question: WHEN do I freeze it? Can I just put the uncooked balls of gluten in the freezer after they've rested, or should I cook them first? The "cooking school" recipe gives several ways of cooking it...which works best for freezing? Please advise!

For homemade seitan, you can keep it a couple of days in the fridge in the cooking liquid. It will last for a couple of months in the freezer.  I usually store it in the freezer without the liquid. Wrap it tight.

Joanne Stepaniak says in Vegan Vittles, "...store the seitan in the refrigerator for up to ten days, or in the freezer for up to six months. To extend the life of fresh or defrosted seitan indefinitely, boil it in its soy sauce broth for ten minutes two times a week."

I made some seitan last weekend and my DH and I ate about half of it at that time. This week, he did the boiling routine with the piece that was left and I couldn't tell the difference from the first piece when I used the second.  :)

I am VERY new to the world of seitan.  That being said, I freezed a bit durring my last round with it. 

No issues. What so ever.

I can only handle it in small doses and I made a large batch.  If it's supposed to be chewy, meaty, and dense; freezing it don't mean a thing'.

From what I see on baypuppy's link, you freeze it once it's cooked, because it says "the finished steaks." Nutdragon, did you freeze yours cooked or uncooked?
I'll just have to get brave and try some both ways. Shoot you can freeze raw bread dough and it works, I bet you can freeze raw seitan.

Yes, you can freeze seitan. I have only done it after I have cooked a big batch. The texture and taste remained the same when it is defrosted.

I froze it after it had been cooked (I actually cooked it twice, once boiled, then baked it to get the edges crispy) and froze it.

Dave, you mentioned some personal seitan recipes a while ago, please do tell.
I am curious about experimenting with the process bit and shapes.  It's really quite meaty (almost alarmingly so); I need to get over the thought "this is so weird" with each bite  :)

I'm not sure how much play you have with the technique before you end up with a bunch of wasted food.

I made seitan from VWAV but I have way too much... Can I freeze it?  Do I freeze it in the liquid?  Cut it into small bite sized chucks before freezing?????

I have frozen baked seitan with no problems. I don't know how boiled would react. I would try freezing some in the liqud, to test. Leave it in there for a couple-three days and then defrost.

I've never done it but I believe that in the original SOG thread on PPK, people report doing so with success.

I've frozen the seitan from VWAV and it was okay afterwards.  It didn't kill me!

You guys are fast!  My bf LOVES this recipe..the only thing he won't eat reheated are the blender oat waffles on this site..says they taste bad after freezing. Just wanted to check!

I've been wondering this myself because I want to make different flavors and use them as needed.  I guess I'll just try freezing half and see what happens.  That way I won't ruin the whole thing if it doesn't work.

Yup!
You can freeze it.  :)
Just don't thaw it in the microwave....it turns hard as a rock (at least it did the one time I tried that)! :D

I put my leftover seitan in the freezer about a week after I made it. anyone know how long it's good for in the freezer?

i've been making seitan for several weeks now and successfully have frozen and de-frosted it! it's perfectly fine. i think seitan can last in the freezer for about 4 weeks or so? honestly, i imagine it's fine for a bit longer. it just doesn't last that long  :)>>>
