Seitan - Freezing Guidance

I'm about to embark on a new adventure of making my own seitan. Gluten powder here is about $1.50 a pound, while readymade seitan in the cold case is like $4 a pound...do the math. I've surfed a lot of the recipes etc. on the site and they look good, but I have a question: WHEN do I freeze it? Can I just put the uncooked balls of gluten in the freezer after they've rested, or should I cook them first? The "cooking school" recipe gives several ways of cooking it...which works best for freezing? Please advise!

yeah, mine has been fine so far. I thawed some in the toaster oven and used it for fajitas the other day. yum!
