recipe using Vegan Sour Cream

I have a tub of it in my fridge...I always seem to let the stuff go bad. I want to whip something up with it, but have no ideas! I tried doing a search but still couldn't find anything good. Anyone have a tried and true recipe that uses it? Before it spoils!?

chip dip!!! as soon as i get sour cream, i add a packet of onion soup mix and dip chips in it.  then when i actually need sour cream, it has a nice onion flavor to it.  i add it into anything with potatoes, burruttos, sandwiches. mmmm i wish they sold vegan sour cream around where i live.

The first thing that comes to mind is twice-baked potatoes.  I don't have a recipe, just wing it.  Basically, bake a few potatoes.  When they're cool enough to handle, slice a bit off the top, and scoop out the insides, leaving a slight rim around the edge.  Mix the potato with vegan sour cream, whatever spices you like along with salt and pepper, and perhaps some vegan cheese.  Mound this mixture back into the potatoes, and put back in the oven to reheat the potatoes and maybe brown the tops a little.  The second thing that comes to mind is spinach dip.  I usually just do a vegan version of the recipe that comes on the boxes of vegetable soup mix that you use to season the dip.  It's pretty much just frozen chopped spinach (thawed and drained well), vegan sour cream, perhaps some Vegenaise, a package of vegetable soup mix (Fantastic Foods or grocery store brands), chopped green onions, and chopped water chestnuts--don't remember much else to it.  One more idea is stroganoff.  There are several versions on this site; the one I've enjoyed is Meatball Stroganoff (http://vegweb.com/index.php?topic=7568.0)  Of course, you can always make a pile of vegan Mexican food and top the dishes with vegan sour cream, also.

I had about 1/2 tub left in the fridge and it needed to be used so I added it to my garlic mashed potatoes.  It was very, very good - nice and creamy with a hint of the sour cream.    ;)

Send it to me, I eat vegan sour cream with a spoon right out of the tub.  :D

Thanks you guys! I ended up making some chip dip, and now I'm actually off to the store to buy another tub so I can make that hashbrown casserole recipe that Hopfrog suggested. :D
I never knew there were so many uses!  Keep 'em comin!

I've made the Cheesy Potatoe Casserole. It's really good stuffed in breakfast burritos with some refried beans & salsa.

Oh yum! I wish my local burrito shop, who make wonderful vegan burritos for me, would make these, too!
