Hi all!
I am making Daiya Quesadillas for dinner tonight. What should I have with them? In them?
For some reason my mind is a complete blank!

oooooooooo....I like chopped mushrooms and green bell peppers and LOADS of garlic in mine! I'll be right over! ;D ;)

Yum! Why didnt I think of putting more than cheeze inside them?! I think I will have to stop at the store for mushrooms now. :) Thanks Irrevrent!

My friends used to make a really good ones using pesto, carrots, onions and I'm not sure on the last ingredients but perhaps a type of bell pepper.

LB asked for Tofurky slices and tomato inside his quesadilla. So thats what we had. So good! Served it with salsa rice, sour supreme and salsa. I did make a third one just for my lunch today that has tomato, refried beans, lightlife taco crumbles, onions and peppers inside with the Daiya. Nummy!
I will have to do this again sometime with avocado and mushrooms inside one. That would just be heavenly. Thanks for the ideas all!!

You're so creative! My quesadillas usually consist of Ro*Tel tomatoes and chilies from a can, cheez, mushrooms and garlic.
Haven't made them in a while because I am still using some dairy, but not much, and Daiya/Teese is nigh impossible to get and super SUPER expensive if you can get it around here.
