Please tell me what I am doing wrong w/ this recipe???

It's the  Oatmeal Breakfast Bars

http://vegweb.com/index.php?topic=5236.0

Its the 2nd time I made them and they DO NOT hold together. Very crumbly. I followed the recipe exactly except added 2 tb. of maplesyrup.

One time I tried 2 flax eggs the other 1 flax eggs....same result.

Please help!

Well I cooked them 5 min longer seemed to help a little but some barely hold together still.

if they are falling apart, I would dare say they aren't quite moist enough...try adding a little more water and see if that helps. That's what I do when I make burgers anyways...If you accidentally add TOO Much water, just balance it out with more oats.  Keep playing til the hold together for you.

imo, flax and water doesn't work that well for baking.  I use the powered egg replacer now and things seem to turn out much better.  Granted, I'm not the best baker.

OK  maybe thats it...I'll try adding some soymilk or water next time. It did seem very crumbly before cooking.

I've never made that recipe in particular, but I've found applesauce works quite well as an egg replacement in my baked goods. Sometimes too much applesauce can make muffins and breads chewy, but in granola bars I've never found that to be a problem. I think I usually use 1/4 cup of unsweetened applesauce per egg, and if your batter is already dry and crumbly I wouldn't suggest reducing the liquid at all to compensate. Good luck!

Or indeed 1 ripe, ripe banana with maybe a little soymilk to thin it.
