Oatmeal Breakfast Bars

Ingredients (use vegan versions):

    2 and 2/3 cups oats
    1/3 cup flax seed meal
    2 medium bananas, mashed
    1/3 cup canola oil
    1/2 cup dried fruit (cranberries, raisins, whatever you want)
    2/3 cup chopped nuts (i use pecans but walnuts, peanuts or sunflower seeds will work)
    1/2 tablespoon cinnamon
    1-2 tablespoon some kind of vegan sweetener (i use honey, but i know with vegans that is a no no)
    enough liquid Ener-G Egg Replacer to equal one egg
    add a small amount of water if mixture isn't moist enough.

Directions:

Combine all the dry ingredients and mix well. add mashed bananas, liquid Ener-G Egg Replacer, oil and sweetener and mix well until blended and mixture is sticky.  now this part is messy, but worth it.  Shape dough into bars on a greased cookie sheet, making the bars about 1/3 inch thick.  I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets. Bake for 15 minutes in a 350 degree oven.

I make these for my husband in lieu of buying him store bought breakfast bars.  They are healthier and cheaper. They aren't very sweet either, but you can add more sweetener to your discretion.

Serves: about 10

Preparation time: 10 minutes or so

I made these for my husband as well.  They are very good!  Instead of flax seed meal (i couldnt find it) I used wheat germ and they turned out fine.  also I used dried cranberries and finely chopped sunflower seeds.  Great recipe and quick too!!! Thank you!

I used barley malt and pancake syrup mixed (2.5 tbsp) for the sweetener and it turned out well.  Instead of forming bars, I pressed the dough into a couple of shallow baking pans and then, when still slightly warm, cut the bars into squares and let them cool fully on a wire rack.  That was a lot less messy than making bars and they cooked evenly.  This is a great recipe!

Thank you for this recipe, it was pretty easy to make and had just the perfect amount of sweetness for a breakfast bar. I did end up using a little extra Ener-G Egg Replacer, but I really liked how these bars held together. Very satisfying bars.

these don't seem to keep very long unless you refrigerate them or even freeze them. i am not sure what to add to them to make the shelf life longer...heh. but i generally make a batch a week for my husband and he has no problems with them going bad.

These are yummy too!  I made mine with chopped dried apricots, but am thinking chopped dried apples might go better.  I also forgot to grind the flax seed.  Still taste great and still hold together.  They ARE filling.

Yum!!  I added about 1/4 tsp salt and I used pumpkin pie spice instead of just cinnamon.  I chose dried apples for the fruit, brown sugar for the sweetness, and almonds for the nuts (well, there were about 3 walnuts too, since I had a few Smiley )  I followed another reviwers advice and put the dough in a shallow pan, but baked it for 20 minutes.  These are awesome!  I think next time I'll add a bit of vanilla and see how it goes.  Smiley  Thanks for the recipe!

Yummy, very filling and satisfying.  I added some coconut, flax seed, choc chips, sunflower seed, raisins (whew!)  Plus cinnamon and vanilla.  I also found that pressing them into a pan and cutting them into bars afterwards worked well.  Theyre kind of moist (because of the bananas), not crunchy like store-bought bars can be, but that's OK, I like them that way.

I love this recipe. Instead of honey or other type sweetener I used 1 level tsp. powdered or liquid Stevia. I am a diabetic so no sugar and the Stevia is great it lowers blood sugar levels!

i love these because they aren't too sweet. my bf though doesn't like them much because of this same reason. i used molasses for sweetener. i top them with natural peanut butter for breakfast, so yummy and healthy.  elise: i used apple sauce instead of egg replacer.

i melted down chunky peanut butter and vegan chocolate chips and spread it on top after they cooled. im made them perfect for snacking, and they still can pass as a decadent breakfast!

These bars are really good! I only added half the amount of oil and I addded a bit more flax and fruit (used dried prunes and they taste great!). I also baked them in a pan (15 min.) and cut them into bars afterwards. In the future I will try to eliminate the oil and use applesauce, anyone tried that yet?

i don't use oil in mine. it works fine with melted margarine or apple sauce.

These are delicious! Subtly sweet with a nice clean taste. I put a little nutmeg in with the cinnamon and added some salt. Very yummy!

These were pretty good.  I added 1 tablespoon each of brown rice syrup, maple syrup, agave nectar, and blackstrap molasses for the sweetener.  I only used half the oil and substituted 3 tablespoons of applesauce for the egg replacer.  The recipe is good in general, except I think maybe a quarter cup of flax seed meal would be better because a third cup makes the bars a bit too bitter.  I spread the batter in a 13x9 baking dish and then cut it into 12 pieces when it was done baking.  I think maybe a little more time would be better to make the bars a bit more firm.  Other than that, a very solid recipe.  Thanks!

I made these this afternoon and already love them.  I love knowing I'm eating something so natural and healthy. No unhealthy additives.  I used about 1.5Tbs of evap cane juice sugar as the sweetener. And I used about 7Tbs of applesauce in place of the oil and egg.  The stuck together very well. Baked for about 20 min. Delicious.

86'd the oil and added an extra banana. used chopped pecans, dried blueberries, craberries and apples.

These were amazing and very healthy!  I will definately make them again.  I used sunflower seeds, dried apple rings and maple syrup.  Perfect consistancy and fruity! next time i'm gonna use applesauce in place of oil.

these were quite good.  they definitely taste like healthy energy bars, not a dessert.  couldn't get flaxseed meal, so I used oat bran.  used a trail mix for fruit & nuts.  I liked them warm best; later they became slightly rubbery.  I did double the egg replacer, which is my standard procedure (haven't been satisfied in the past) and that or the oat bran could have changed the texture.  I'll probably make these again, but a half batch and with just one "egg" like the recipe says.

I baked them in a 9 x 9 pan for 15 minutes.

I've made this recipe twice and like it.  I make 12 bars instead of 10, which brings the calories down to 250 per bar.  After I cycle to work in the morning, this is a great snack.

I thought these were great. Not junk food great like chocolate chip cookies, but a great healthy snack. They're filling and have good flavor. They also hold together well. I used 1/4 cup flaxseed, applesauce instead of oil and maple syrup. I baked them in an 8x8 pan, but next time I might try 11x7 so that they're a little thinner. Also, I forgot to oil the pan and they stuck a little so make sure you do that. Definitely something I'll make over and over again.

i replaced the oil with apple sauce, used raisins for dried fruit, used chopped almonds & sunflower seeds, and used a maple-flavored stevia syrup for the sweetener. these are yummy and make a great protein-filled breakfast! however, i think i will bake them a bit longer next time as i think i would prefer them crunchier. i plan on adding in dried cranberries & shredded coconut next time around. this recipe will be fun to experiment with!  Smiley

Since I found this recipe I have made a new batch as soon as the last batch is finished being eaten! These are a great nutritious snack, I usually use sunflower seeds and dried cranberries and raisins. I skimp a little on the oil and they turn out just fine. I usually get 15-18 bars.

I was looking for a 'breakfast' I could take the gym and this recipe had very similar ingredients to the muesli I like so I thought I'd try it. It was really easy and pretty tasty. I like the slight moist, chewy texture. You could muck around with this recipe a lot and it would still taste good. I used LSA instead of flaxseed and like others I only used a tiny amount of the recommended oil. I reckon coconut and tahini would be good in this too.

I just made these, I didn't have flax meal so i used ground up sunflower seeds and chopped apple for fruit and whole sunflower seeds. They taste kinda funny, maybe because of the ground sunflower, not the right flavour.. and a little soggy on the bottom. baked in a pan for 20 minutes. Any suggestions on making them all around crispier? Also I used rolled oat, in the picture they look like some other oats. specific kind?

Good stuff.  I replaced the eggs with "flax eggs" (flax seeds blended with water),  the flax meal with oat bran, and the oil with apple sauce.  Apricots and almonds were my fruit and nuts. Added a tbsp of maple syrup for sweetness, a little nutmeg for kick and soymilk for moisture.  Cooked em' in a pan for 15 mins, then sliced them into 12 squares and put them back in the oven for another 5.  They're a little chewy, but sooo much better than anything you'd get in a store.  LOVE the walnuttiness.  And I love the versatility of this recipe.  Might try prunes or apples next time.
