1/3 cup flax seed meal
2 medium bananas, mashed
1/3 cup canola oil
1/2 cup dried fruit (cranberries, raisins, whatever you want)
2/3 cup chopped nuts (i use pecans but walnuts, peanuts or sunflower seeds will work)
1/2 tablespoon cinnamon
1-2 tablespoon some kind of vegan sweetener (i use honey, but i know with vegans that is a no no)
enough liquid Ener-G Egg Replacer to equal one egg
add a small amount of water if mixture isn't moist enough.
Directions:Combine all the dry ingredients and mix well. add mashed bananas, liquid Ener-G Egg Replacer, oil and sweetener and mix well until blended and mixture is sticky. now this part is messy, but worth it. Shape dough into bars on a greased cookie sheet, making the bars about 1/3 inch thick. I would definitely recommend shaping all the bars at one time, because the longer the dough sits, the stickier it gets. Bake for 15 minutes in a 350 degree oven.
I make these for my husband in lieu of buying him store bought breakfast bars. They are healthier and cheaper. They aren't very sweet either, but you can add more sweetener to your discretion.
Serves: about 10
Preparation time: 10 minutes or so

I made these for my husband as well. They are very good! Instead of flax seed meal (i couldnt find it) I used wheat germ and they turned out fine. also I used dried cranberries and finely chopped sunflower seeds. Great recipe and quick too!!! Thank you!

I used barley malt and pancake syrup mixed (2.5 tbsp) for the sweetener and it turned out well. Instead of forming bars, I pressed the dough into a couple of shallow baking pans and then, when still slightly warm, cut the bars into squares and let them cool fully on a wire rack. That was a lot less messy than making bars and they cooked evenly. This is a great recipe!

Thank you for this recipe, it was pretty easy to make and had just the perfect amount of sweetness for a breakfast bar. I did end up using a little extra Ener-G Egg Replacer, but I really liked how these bars held together. Very satisfying bars.

these don't seem to keep very long unless you refrigerate them or even freeze them. i am not sure what to add to them to make the shelf life longer...heh. but i generally make a batch a week for my husband and he has no problems with them going bad.

These are yummy too! I made mine with chopped dried apricots, but am thinking chopped dried apples might go better. I also forgot to grind the flax seed. Still taste great and still hold together. They ARE filling.

Yum!! I added about 1/4 tsp salt and I used pumpkin pie spice instead of just cinnamon. I chose dried apples for the fruit, brown sugar for the sweetness, and almonds for the nuts (well, there were about 3 walnuts too, since I had a few

) I followed another reviwers advice and put the dough in a shallow pan, but baked it for 20 minutes. These are awesome! I think next time I'll add a bit of vanilla and see how it goes.

Yummy, very filling and satisfying. I added some coconut, flax seed, choc chips, sunflower seed, raisins (whew!) Plus cinnamon and vanilla. I also found that pressing them into a pan and cutting them into bars afterwards worked well. Theyre kind of moist (because of the bananas), not crunchy like store-bought bars can be, but that's OK, I like them that way.

I love this recipe. Instead of honey or other type sweetener I used 1 level tsp. powdered or liquid Stevia. I am a diabetic so no sugar and the Stevia is great it lowers blood sugar levels!

i love these because they aren't too sweet. my bf though doesn't like them much because of this same reason. i used molasses for sweetener. i top them with natural peanut butter for breakfast, so yummy and healthy. elise: i used apple sauce instead of egg replacer.

These are awesome!! I'm not a vegan, so I used 1 egg and 2 Tb honey. Might make them a little sweeter next time. These were great for breakfast and for snacking!

i melted down chunky peanut butter and vegan chocolate chips and spread it on top after they cooled. im made them perfect for snacking, and they still can pass as a decadent breakfast!

These bars are really good! I only added half the amount of oil and I addded a bit more flax and fruit (used dried prunes and they taste great!). I also baked them in a pan (15 min.) and cut them into bars afterwards. In the future I will try to eliminate the oil and use applesauce, anyone tried that yet?

i don't use oil in mine. it works fine with melted margarine or apple sauce.

These are delicious! Subtly sweet with a nice clean taste. I put a little nutmeg in with the cinnamon and added some salt. Very yummy!

These were pretty good. I added 1 tablespoon each of brown rice syrup, maple syrup, agave nectar, and blackstrap molasses for the sweetener. I only used half the oil and substituted 3 tablespoons of applesauce for the egg replacer. The recipe is good in general, except I think maybe a quarter cup of flax seed meal would be better because a third cup makes the bars a bit too bitter. I spread the batter in a 13x9 baking dish and then cut it into 12 pieces when it was done baking. I think maybe a little more time would be better to make the bars a bit more firm. Other than that, a very solid recipe. Thanks!

mirrya1, maybe applesauce? although its not got quite the same sticky consistancy that bananas do. you could try it though.
