new here.. a question about Tofu

Hi all, I am not a Vegetarian.  <hangs head and ducks>  :)
but I would like to institute a meatless day of the week in my house.  I was Veg out of high school for a bit, didn't last though.  Due to not learning properly, i ate alot of Dahl...lol

As i need a low carb/protein diet due to having weight loss surgery.

Well anyway my question is this.  I am looking for your recommendations for Tofu recipes for my 16 month old son.  He can't eat eggs (every time he's had them he's thrown up)

I want my son to growup eating a healthy diet.  In fact i've informed my husband that he's never to give him Fast Food.  (not that we eat it much, and i can't)

Again tofu recipes for my toddler?

A friend of mine passed along two kid-friendly tofu recipes for my sweet tooth.

Tofu yogurt- In blender, add drained soft tofu, 1/2 cup berries, a little lemon juice and vanilla extract, sweetener to taste. Blend it all together to a creamy texture.

Tofu chocolate mousse
--Blend tofu, cocoa powder, sugar. Or you can just blend tofu with sweetened chocolate soymilk and still get great results.

Hi!  I also have a 16 month old son!  He just turned 16 months old today!

Anyway, his favorite is tofu stir-fry.  I admit, that I am supposidly ovo-lacto vegetarian, but I am not 100% strict about it and take some short cuts.

Here is how I make the tofu-stir fry.  

2 packages of ramen noodles (either chicken or oriental flavor).
1 lb bag of frozen mixed veggies, your choice (I like broccoli, califlower and carrot)
1 14 (or 16) oz tub of tofu
1 tbsp veggie oil

Cut the tofu into 1 inch cubes.  Put into non-stick skillet with 1 tbsp oil and mix up. Add one seasoniong package from ramen noodles to the tofu and then cook until it is golden.  

While tofu is cooking, microwave the bag of veggies for about 4 minutes.

Put on a pot of water to boil.  

Once the veggies are done in the microwave and the tofu is golden brown on all sides add the bag of frozen mixed veggies and the second seasoning package from the ramen noodles and cook until the veggies are tender.  

Add ramen noodles to pot of boiling water and cook until tender (about 3 to 5 minutes).

When noodles are done, drain them, but reserve about 1/4 cup of the water with the noodles.  

Once the veggies are tender, add the veggie/tofu mixture to the noodles and mix up really well with two forks.

Serve.  Yum Yum!  This is my son's favorite meal.  It sounds like a lot of tofu and noodles, but he eats so much of the tofu and noodles that I barely get any for myself!

You can't really go wrong w/ tofu scramble. There are a lot of good recipes on here. I think this one is good for toddlers, as it is a little smooshier than others http://vegweb.com/index.php?topic=14074.0

My daughter has always liked baked tofu. I love some of the recipes in Vegan Vittles for that, I think there are similar ones on here(think chicken strips)

BBQ tofu-cube or slice tofu, coat in your fav. bbq sauce, fry.

you could always use angel hair pasta (cut up, i would think, so it doesn't pose such a choking hazard) and better than bouillon instead of the season packets (or just mix up a bunch of spices too)

there are a couple different flavors of organic ramen noodles too if you can find them.  they're waaaaaaaaay better for you than the traditional 25cent ramen - less calories, less fat, less sodium & theyre organic.  ive found them at health food stores for around 1.30 each

There are also several recipes here for fried tofu and peanut butter sauces that are great. A child might enjoy something with peanut butter...even veggies.

I agree - my daughter is nuts about tofu scramble! We call it "Yellow Tofu." She also loves it cubed & pan fried in any Asian dish.
In my experience, 90% of all kids love tofu when it's introduced to them in a positive, yummy way. Good luck! :)

Don't use the seasoning packets, and just use your own spices.

There is a really, I mean REALLY good stirfry sauce on this website, let me see if I can find it.  I use it a lot and is pretty simple too, and when I use it, I just throw away the seasoning packet for the ramen noodles and just use the noodles.

Or, you can use rice...

the ramen noodles themselves are really terrible on their own.. theyre deep fried before they get put in that little bag.  thats why the water gets all those oil puddles on top, it's not from the packet  (thats where the msg is).  i feel like i remember seeing that each serving had like 18 grams of fat in it, but they consider each packet as TWO servings!  yikes!!
