new here and have a toughy for all you veg cooking pros
ok so hi, I am new here and am looking for some help with my diet..i want to eat healthier and more rounded and wholesome meals..i have a severe bladder disorder and cannot eat a very large range of items so i am looking for recipes that are either very easy to modify or that fit within my parameters, any help is great so i cannot have the following
no:
any fruit other than blueberries, apples, bananas, and pears
no soy (makes being veg very hard i would assume)
any vinegars
any acids basically, so no lemon lime etc...
no chocolate (super bummer by the way)
no caffeine
no vitamin C which makes it hard on my body to absorb iron so i am iron deficient and need more natural sources that absorb easily
no spices like pepper or cayenne etc...
very few spices i can actually have so it is hard
nothing fermented
what are some vegetables you usually eat?
can you eat onoins, ginger, garlic or leeks?
can you eat grains, nuts, seeds or beans?
I guess its not possible to eat nutrional yeast flakes?
are coconuts?

Since you were not extremely specific I will give general ideas on what I think may be acceptable.
Breakfast: Oatmeal with Blueberries
Snack: Carrots & Hummus (make the later yourself and leave out the lemon juice)
Lunch: Sandwich & chips & veggies
Dinner: Mashed potatoes, Chickpea cutlet (google for the recipe as its on the web but also in the Veganomicon) and green beans steamed
Breakfast: Apple muffins & a green smoothie made with vanilla coconut yogurt, a banana & kale or spinach
Snack: Popcorn
Lunch: Veg Noodle Soup & Salad
Dinner: Rice & Beans with a veggie of choice
Breakfast: Cinnamon Pear Scones (I like the scone recipe in Vegan Brunch)
Snack: handful of dry roasted peanuts
Lunch: Veggie tacos w/ refried beans, lettuce & tomatoes
Dinner: Stir fry w/ loads of veggies and a hint of soy sauce
That is just 3 menus off the top of my head. Mind you this is catered to my tastes and interests. But you can be vegan without soy. Heck you can be vegan soy and gluten free! There are wonderful blogs out there with recipes. There are excellent cook books. There are so many many ways to eat whole foods without too much trouble. Since you cant eat soy, look more towards beans and when you feel comfortable try seitan. Steam veggies to bring out their flavor. Grill them to give them depths instead of spices. Explore your options without dwelling on what you cannot have.

the first thing I thought of was chick pea burgers. There are several recipes for them, and I have kinda combined several to make them the way I like. Chick peas in general can be used so many ways!
I would probably eat lots of greens like collard, turnup greens, spinach. Sounds like you can eat most veggies.
steel cut oats for breakfast. Make in crock pot a weeks worth at a time.
black bean enchiladas
wraps with hummus and veggies
So, it looks like you can have beans, and grains, and gluten, and most veggies, right?
Breakfast should be easy w/ smoothies, pancakes(use rice or almond or hemp milk), cereals, muffins(can you bake w/ vinegar?), etc.
Lunch and dinner could be lots of different kinds of sandwiches/burritos, soups, stirfries, pastas, salads(think beans and grains added to lots of yum veggies, w/ maybe a tahini or peaut dressing?)
