What is a good vegan macaroni and cheese recipe that doesn't use vegan cheese?
I don't care what brand, but vegan cheese is so yucky and expensive. So I am thinking of a vegan mac n cheese made with NY sauce rather than vegan cheese.

I totally love this stuff on elbow macaroni. It's a little spicy usually the way I make it, but then again I sub in chili powder for half the paprika and use hotter salsa. But if you didn't want it to be spicy you could use just canned rotel tomatoes. It cooks up really quick and and I think adds an interesting twist to mac and cheese (I hated mac and cheese until I went vegan and started eating this stuff).
hey SQ690- this is my cheese recipe from my blog, (i know theres only a couple recipes on it right now, but I'm working on it:) It is listed under grilled cheese, but if the sauce if made with more liquids, it easily is added to noodles for mac and cheese, (I typically add a bit of the cooking liquid from the pasta to thin my sauces out.) The recipe is easily modified but using only tofu or only cashews, more or less of the veggies, and adding different spices, (I add roasted red peppers and green chiles sometimes for a more nacho-ey sauce) anyways, I like it cause it is not only tastey but wholesome, and I like the cashew/nut cheese variation better than the flour/mustard/garlic powder/onion powder kinds of cheese sauces out there.
Hope you make and like it!

the flashback mac and cheese from this site is good. I add a little dijon and garlic and a pinch of ginger.
Veg News mac & cheese! It uses no fake cheeses or nutritional yeast and tastes hauntingly cheese like.
I am on a quest to find a recipe to replicate kraft mac n'cheese. any ideas??

Cook some pasta noodles and mix in Melty Cheese... sooooo delicious :) this tastes good only when you use soy milk... i tried using almond milk and it was nasty for some reason
Also Road's Inn vegan mac & cheese (comes in a box like Kraft mac & cheese) is really delicious :)
could you put a link for the veg news one? I've looked for it before but I thought it was a boxed mac & cheese from amy's...?
Here is some pictures of the Roads End mac & cheese

Soooo yummy :)
Rabidchild got me curious...no nutritional yeast OR mock cheese? Weird. I use Isa's "Alfreda" sauce from vegan with a vengeance on shells and macaroni noodles...ok, I confess...I use it on everything!
