Melty Cheese

Ingredients (use vegan versions):

    2 cup soy milk
    4 oz. pimento
    1 1/2 teaspoon salt
    1/2 teaspoon onion powder
    3-4 tablespoon yeast flakes
    1/4 teaspoon garlic powder
    2 tablespoon cornstarch
    1/4 cup raw cashews
    1 tablespoon lemon juice.

Directions:

Blend cashews and pimentos in small amount of soymilk until smooth, add remaining ingredients, blend to mix. Cook in heavy sauce pan until thick stirring constantly. Well, I just cooked up this recipe tonight and it was just marvelous!!!!!!!!!!!!!!!!  This recipe open up a new area of cooking for me.  I can't wait to try this "Melty cheese" with other foods.

I have always considered myself a good cook, but I am sitting in the back seat watching all of you people here.  And, I am amazed at how many good cooks are out there.  It takes great talent to come up with a recipe like this.

Keep those recipes coming.............. Grin  and thanks.

I am back to say that this recipe is awesome.  In order to save time I make up 5-6 "Melty Cheese" kits. In a quart bag, I put a 4oz jar of piementos, a sandwich bag with all of the spices, and cornstarch (or arrowroot works well also), a sandwich bag with washe'd and dried cashews. I label it with what I need to add and when I need "cheese sauce" quick most everything is in one place making meal preparation alittle easier.

Also I have used 1 cup of milk and 1 cup of water with good results.

Thanks Jim, your recipe has made "going vegan" smoother,
quicker and easier.

I have a question I have never had pimentos before and I was wondering if those are hot?  I have interstital cystitis and I can not have anything hot spicy or with acid.

i'd check the label for the acid, but they shouldn't be spicy at all.

I didn't have pimentos but i had a can of chipotle peppers.  I added a few spoons of the sauce (not too much, a little goes a LONG way).  I also used more flakes and nuts.

whooaa, so you didn't use any cashews? did you include the pimento?

just wanted to make sure, because i don't have any nuts and if it works without them, i'll definitely try this!

i'm sure the nuts would create a thicker texture, but i just used it as a cheese sauce and it was delicious. i did use the pimentos...though i'm not really sure what purpose they serve...you should try it

This cheese is AWESOME!! The nutritional yeast taste is very mild as there is not much in this recipe--tastes like the real thing! Thanks for the great recipe!!
