Nutritional Yeast Queso Sauce

Ingredients (use vegan versions):

    1/4 cup nutritional yeast
    1/4 cup flour
    1 teaspoon paprika
    1 teaspoon salt
    dash of garlic powder
    1 cup water
    2 tablespoons margarine
    1 1/2 cups salsa OR 1 can diced tomatoes and peppers (RoTel or other brand)
    tortilla chips

Directions:

Combine dry ingredients in a saucepan.  Add water. Whisk constantly over medium heat until mixture is thick and bubbly.  Remove from heat and add margarine. Stir until margarine is melted. Stir in can of tomatoes.

Return to low heat and cook just long enough for tomatoes to heat. Pour over chips and eat like nachos or use as a dip.

I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches. Remember to always whisk it!!

This sauce is sooo good.  It tastes more like cheese than any other nutritional yeast cheese sauce I've ever tried.  I used it to make burritos.  I spread refried beans on flour taco shells.  Then I spread the lentil filling from the Unbelievable Lentil Tacos on this site.  Then I spread the Nutritional Yeast Queso Sauce over that and rolled them up and poured the rest of the sauce over them and baked them at 425 until they were crispy around the edges.  When they were done, I put salsa over them.  The only way they could've been any better was if I had topped them with Tofu Sour Cream submitted by Matt Eberhart on this site.  The Mmmm Mmmm Mexicali on this site would've been a good filling for these as well.

This sauce is officially my new "cheese" sauce for tacos, burritos, and enchiladas.  It would also be good mixed with macaroni noodles and "burger" crumbles for a Mexicanish mac and cheese.

I just wanted to add that I subbed vegetable oil for the margarine because I didn't have any and it still turned out great.

I absolutely love this recipe, it has become a staple in my kitchen. It is so versatile, I am posting a great recipe which uses this sauce!! Thank you so much!! My husband misses cheese a lot and this recipe helps give him a great alternative.

This recipe was DELICIOUS. I loved it. I've been lactose intolerant my entire life, so even before I became vegan I could only enjoy mexican cheese dips with the help of a lactaid pill. Now I have a nondairy alternative and a vegan-friendly recipe that far exceeds the original!

This was my first attempt at using nutritional yeast. I had to go to Whole Foods to get it, but I am so glad I did! I followed the recipe almost exactly as instructed, but I didn't add any margarine at all. It didn't seem to make any difference. It was still creamy and delicious. As far as seasoning went, I didn't have any paprika, but I added some garlic based mixed peppers and cumin. Oh, and I highly suggest using extra chunky salsa. Everyone who tried it loved it. I don't have any vegan friends at all, and they couldn't seem to figure out how I had whipped up chile con queso without any kind of dairy! Cheesy

Ohmygod this was so awesome.  I used fire roasted tomato salsa and blue corn tortilla chips.  My bf and I ate the whole thing!

This recipe is amazing! I have spent hours looking for a delicious and easy sauce to make and this one really hits the spot!

I thought I had salsa but I didn't, so I subbed it for hot enchilada sauce which I think turned out way better as I am not a fan of chunky dips.

OH MAN!  This is some good sh!t!!!  Tastes just like the kind that you would get on nachos in the cinema (except not gross).

And it was so fast and easy to make!  Seriously foolproof and delicious!  I can't believe it, I have been waiting for something like this.

Totally awesome, three thumbs up, 6 stars, etc, etc.

Very delicious!  I didn't have any garlic powder so instead I used a teaspoon of garlic salt and omitted the regular salt.  Also, I only used 3/4 cup of picante sauce.  It was just what I was craving!  Thanks.

Hey jennveg! I agree that nutritional yeast is an acquired taste (like most things), but I was wondering what brand you are using? In my experience, Red Star is the ONLY brand that tastes good. I've bought some other ones and they have a very funky, pungent taste. If you haven't tried Red Star yet, I recommend it...whenever you're up for nutritional yeast cheeses again! :-)

I also like KAL brand that comes in a canister...and YES its an acquired taste. I didn't like it at first either, but now I crave it all the time!!! Be sure you're not using brewer's yeast-that would be gross!
