This loaf was so so so good. I asked my mom to make this for me for Christmas dinner.
I have all of those ingredients! Awesome! I don't like grains and the only grain is a quick cooking oat. Once the oat gets squashed flat I don't count it in the bad grain category anymore. I've never tried to make sense out of my categorization.
Fabulous. I am in love with vegan "loaves." 8)

i could substitute the "soy crumbles" w/ my own TVP right? i get kinda skeeved by the commercially prepared ones. i dunno.
Hm, just made meatloaf last night-- I guess it's that time of year. I had picked up various recipes at the Green Festival and finally got around to making the meatloaf yesterday... it's just crumbles (I used hydrated, seasoned TVP), diced onion, mustard, horseradish, bread crumbs, soy milk, and S&P. I added a couple other seasonings and some NY, and it turned out great!
I made this recipe a few months ago and did not love it, although my husband didn't hate it. He thinks you can fix anything by covering it in ketchup.
I am not a fan of lentils myself, I eat them, and I made a lentil loaf, but I just don't love them. But it seems that any loaf made with ground up nuts is a big hit with me.
When I made this I didn't have soy crumbles but I had TVP in the cubbard. So I made up the required amount and used that and it still turned out delishious.

I can't see why crumbled tempeh wouldn't work, why not try it and let us know! I am not a fan of tempeh myself so I think I will stick with TVP. Let us know.

is this meant to only be eaten after it cools? does it fall apart or something if you try to eat it fresh from the oven?
It is meant to use as sandwiches, I ate it like meat-loaf, with mashed potatoes and green beans on the side and it is excellent. Works well eating right out of the oven.
Do you think that I could replace the walnuts with almonds?
I really don't like most nuts, but I do like ground almonds.
The sandwich photo on the VT site looks so good!
i haven't made this one, but i don't see why not. i made the 'thanksgiving meatloaf' from this site and used pecans instead of walnuts and it tasted great.
Can you eat this hot? Or is it strictly a cold sandwich type of thing?
