How do I make soy cheese?

I went to Whole (Paycheck) Foods and bought a block of soy cheese with jalapenos. Love the daylights out of it. But alas I would love to learn how to make it. Does not have to be jalapeno cheese but it would be nice. I would love to learn how to make that flavor and wonderful consistency.

Suggestions?

theres a book called the ultimate uncheese cookbook.  i dont have it but you can read some reviews of it over in the cookbook forum, theres a thread devoted to it.

Can someone recommend a recipe, hate to pick up a whole book and suddenly say naaaah this is not working...

I am piecing together an experiment. The way I see it I can go in two directions 1) Cashews or 2) Tofu. I would prefer tofu because cashews are rather high in fat no?
