HELP! Noah Ice cream Emergency!

Tomorrow in Noah's class they are making ice cream using the ziplock, salt, milk, method. I'm sending in soymilk so he can do it to, but I am worried that it won't work for whatever reason (not enough fat?) Has anyone tried this.....I don't want him to be disappointed and think his milk is substandard!  :-\

Is there something else we might have to add to make it more successful?

i think you should send him in with chocolate soy milk, so his is even better than the other kids.  hehe

eta: but then my teacher side says no.  that would cause such a commotion in the class.  "he got chocolate... why is his chocolate" ok maybe thats a bad idea.  haha

Could you send him with coconut milk? If not, I think soymilk would work, so long as it's not low fat or non-fat. Most moms are probably gonna send skim milk anyway, which sometimes has less fat than soy. You could try it at home if you're nervous.

eta: I was totally gonna suggest chocolate!!! Then I imagined fights breaking out because he got chocolate and everyone else has blah plain stuff  :P Ooo, I bet his will be extra good if you send vanilla.

This blog recipe mixes 2 parts soy creamer to 1 part soy milk.

I'd go with that ratio and either mix soy creamer and soy milk together or coconut creme/milk and soy milk.

I would just like to add that I did this ice cream thing my junior year of high school ( :-[) and my teacher brought toppings.

And if you have arrowroot powder, like in the blog, it couldn't hurt to add that, too.

thanks you guys! I think I will add a bit of arrowroot just in case.....the one kelsi posted used gelatin so I figure it will do the same thing (thanks HH). I will probably not do chocolate just because it will make him stand out more. He already might be the only one with his own little baggie-not sure!

The soymilk worked! Yay!
I was a little worried that his would be all falling apart or something (lack of casein). I told him in the morning that if it didn't work that I would take him for a special treat after school. I explained the whole casein/glue thing, and he was grossed out!

I did add a tiny bit of corn starch and some vanilla.

This poor girl in his class who came to my afterschool art class said that hers did not solidify and that she had to "drink" it (she used cows milk). I felt badly for her (she is a sweetie) but I also was glad to hear that cow's milk failed! >:D

Thank you guys again for your help yesterday. This worrisome mama was panicking! :o :o

I remember making ice cream in high school and it not working very well... it just got slushy...
but my teacher said it was probably because I wanted to make coffee flavored/ used instant coffee and that causes melting...
oh well,
I made some gooood coffee ice cream vegan nowadays!  bam! lol.

Rock salt? Is there any significant reason that its just just, well, salt salt?

I think you can use normal salt. I've done it that way, but using coffee cans instead of plastic bags.

Normal salt should work. It's all about lowering the freezing point of the ice.

I'm glad Noah's ice cream worked out. Crisis averted. Go Vegweb!

yes, they just used regular salt. I will try this at home, I think!
I will see if Noah can recall how to do it and post.

Noah's teacher emailed this to me:

It is actually pretty easy.  In a small ziplock (prefer freezer due to a better seal) add 1/2 cup soymilk, 1/2 teaspoon of vanilla, and 1 tablespoon of sugar and seal it up.,

Place it into a bag that contains 2 cups ice with 6 tablespoons of salt.  I only put a couple of tablespoons of salt due to lack of supplies but it worked fine.  Shake it up for a while.  It works if you roll it a bit so that the entire liquid mix freezes evenly.
