Has anyone made a vegan version of Betty Crocker's Gluten-Free cake?

I'm looking for an easy & quick cake option on a wheat-free diet!
Has anyone tried the Betty Crocker's gluten-free cake mix? Is there an easy way to veganize it without using EnerG eggs?

Thanks for letting us know about the "accidentally vegan" Betty Crocker gluten-free cake mixes. I didn't even know about them and the Devil's Food Cake one looks really good.
One of the reviewers said she used half cup of pumpkin puree instead of butter, and egg beaters instead of eggs. Maybe you could do something similar but use flax seed "eggs" for the eggs?

I dont knwo what it calls for in the recipe but you can easily replace butter with margerine and flax or chia eggs work great instead of ener-g just a tad less fluffy in the end. You can replace any oil (or fat) with apple sauce or puree's squash if you feel funky about it only replace 1/2 - 2/3 of the total oil/margerine to see how you like it :).
I have had this once with the eggs and dairy. i think the box call for something like 3 or 4 eggs, with that amt, you are going to have a major difference in the end product using enerG or flax for the eggs. enerG eggs would probably be the best bet, but its not going to be anywhere near the rise of a regular eggy cake. GF baked goods are generally much more difficult to veganize than wheat versions.
you may have better texture and rise by baking the cake as cupcakes, smaller things tend to fluff better. I would also use my mixer with a whisk attachment to beat the crap out of the enerG eggs to help with fluffiness.
I once heard someone say you can substitute soy yogurt for the eggs in boxed goods, but I could be wrong. I don't think many people have had luck using boxed baked goods and veganizing them. The recipes inside the boxes need to be tweaked too, not just what you're adding to them. Let us know if you find something that works!

i've used soy yogurt as a sub, but only in brownies/blondies. i've had success with boxed cake and cookie mixes, but not so much brownies. never tried gluten-free though...
