Guacamole salad!

I'm watching Barefoot Contessa right now, and normally she makes terrible things with more butter than Paula Deen, but right now she's making guacamole salad that looks AMAZING.

Has anyone tried this besides me?  It's totally awesome.  I also added a bunch of cilantro and some sliced black olives.

I've been meaning to try it, but having no money is kind of an issue. But! I'm going home for a few days on spring break (in a car! which means I don't have to worry about liquids and gels haha), so I think maybe I can get my mommy to buy some groceries for me to take home. The cilantro sounds like a good addition!

I was in a happy mood yesterday when I went grocery shopping, so I bought a tooooon of produce-y things that I normally wouldn't buy, including two avocados and some grape tomatoes, with this recipe in mind. Unfortunately, I wasn't really thinking, so I forgot the yellow pepper, and I also don't have black beans.  ::) I will make this recipe though!

edit:  :o This is fabulous. I added cilantro, left out the jalapenos and lime zest, and this was amazing. It tastes like Chipotle (the restaurant)! Everyone make this now!!!

I made it exactly like the recipe called for.  Was fanfreakingtastic!  The party  I brought it too had only omni's there and everyone else loved it too!  Sooo good.  I did serve it with chips, as like a dip but honestly, you could top tacos, quesadillas, nachos, burritos, epmanadas or anything really.

this is delicious.  really really delicious...  i left out the oil (the other liquids were enough) and added some corn.  so good!  i ate it on a bed of spinach, swiss chard, diced up black bean burger, mango chutney, and vegan queso.  i tried to eat it as a wrap but the chard isnt tough enough so salad style it was.

I made this for lunch today, and it is super!  I reduced the olive oil by about half and added cilantro; everything else, I followed exactly.  Oh, and since I'm likely to be the only one eating this, I'm just adding avocado to each serving separately.  This made a really nice light lunch, along with a few chips.  I look forward to eating the leftovers during the next couple days.  Thanks for posting this, ponycakes!

Or more black beans! Aside from the avocado, those were my favorite part, and I normally don't like beans. The corn sounds like a yummy addition too.

I made this, and I was perfecting the spices (adding some garlic salt), and I dumped in a whole heckuva lot of it. For my salad, I used a red pepper, 3 roma tomatoes, the 2 jalapenos, black beans, added some corn, and a bit of cilantro, along with everything else. Oh, and I used 2 green onions instead of the red. I added in some FC to balance out the saltiness, and it wasn't THAT bad, but man..it would have been pretty perfect. P was commenting on how creamy it looked (he HATES creamy), but he enjoyed it, and would have really loved it without all that salt. We ate it on red leaf lettuce and greens. It would be great with any Mexican style meal. I recommend the corn addition (but not a lot).

eta: and I used like 4 cloves of roasted garlic in the "dressing"
