Favourite 'low carb' snack foods

so my husband has invited all his mates round on Saturday night .

as I do, I'll be making snacks for the evening, which is fine, but several of his mates are currently on quite strict 'low carb' diets.
As we have nothing but love for carbs, I'm a bit lost as to what kind of snack foods I could make that are lighter on the carbs, but still tasty and easy enough to throw together.

Anyone got any favorite recipes/ideas?

The only thing I can think of off the top of my head would be raw veggies and some sort of fatty tofu dip.  At least around here, those on low-carb diets won't eat grains, fruits, beans, and so on.  Good luck to you.

thanks!  I was planning on doing some carrot/celery sticks w/hummus/dips because they tend to be fairly popular
Hoping to think of some warm snacks as well but if I can't , then screw them, they can just eat my carrots! : )

Fruit salad? Does fruit have a lot of carbs?
What about spiced nuts?

yeah, fruit has carbs, but I think these people are more concerned with your standard 'culprits' like flour, potatoes, rice, pasta, bread etc...

I think I'll be pretty much the only one who actually eats fruit as a snack though haha.

That's a tough one... Though I wonder how committed to a low carb diet they can be if they're drinking a lot?? But annnnyway, maybe some mini tofu quiches (no crust)? I was thinking like these: http://blog.fatfreevegan.com/2006/12/mini-crustless-tofu-quiches.html They're fairly low-carb.

ETA: Nuts are a good idea too. Maybe some kind of nut/seed mixture. Or how about the Spicy Chickpea Snack on vegweb: http://vegweb.com/index.php?topic=9920.0? Oh, or along the same lines as the mini quiches, maybe some mini faux crabcakes (made with tofu or tempeh)? I don't know if they'd be down with that kind of stuff though...

What about watermelon balls? Watermelon can't have that many carbs, can it?

yeaaaah.  I dunno, but the last time these guys came over, the 'low carbers' weren't drinking that much, but everyone else will be!

So far, I'm thinking :

roasted spiced chickpeas

^those mini quiches

mini spring rolls filled w/veges and vermicelli

carrots/celery w/hummus/dips

chickpea dumplings

maybe thhf's 'meat'balls...

fresh bread to go with hummus/pesto

....

What about watermelon balls? Watermelon can't have that many carbs, can it?

haha  I shudder to think how much it would cost me to buy watermelon at this time of year!! Sounds delicious though!

not sure if you'll check on here again before toorrow night....but what about 'meaty' samosas or wontons made with seitan (or is the pastry in those even too carby?)

'chickn' nuggets using this recipe with some sort of dip? (note I have never tried this, but plan on doing so soon.....so if you try it let me know how it goes)

I'm not sure what is low carb, but if it is, how about spinach-stuffed mushrooms for the next time.

haha, so everyone but one pulled out at the last minute so I got off lightly and just made bread and hummus and mini quiches and spring rolls.  Sweet.

thanks for all the suggestions though, they're filed away in the 'for future parties' corner of my brain! : )

ha, yeah, different reasons, but it's all good, saved me a lot of additional cleaning time yesterday.  The guy who came stayed the night and between him and my husband they drank 36 beers and went to bed around 3am.
I just made sure they had enough food and left them to it.

I had some vegan egg rolls yesterday at a vegan food fair.  I think they were soy based though which I usually try to avoid.  Either way they were pretty tasty and went well with steamed broccoli and mushrooms.
