Spicy Chickpea Snack

Ingredients (use vegan versions):

    1 can chick peas
    2 - 4 tablespoon cooking oil
    1 tablespoon each Cajun spice and chili powder
    1 teaspoon each salt and pepper

Directions:

Preheat oven at 400oC

Drain and rinse chick peas.

Pour oil into baking pan, add spices, mix well.

Add chick peas and mix till well coated.

Place in oven for 15-20 minutes or until crunchy. Stir once half way.  Enjoy cold or hot.

I like to eat these instead of chips or other junk while I watch a movie.

Serves: 4

Preparation time: 3 minutes

Wow, what a simple thing, yet, you want to smack yourself for not thinking of it! Great idea! I'm going to try it with all kinds of different beans... probably kidney since they are cheapest.

there is a similar recipe for this in the how it all vegan cookbook. have made it before and it surprised me how good they were - great on top of savoury dish such as curry or tajine with couscous.

Awesome recipe. Mine didn't get super crispy (and I cooked it longer than recommended) but still great. Good way to get protein into the diet without much work involved. Oh, and maybe it was my chili powder, but this was not spicy in the least, but still tasty.

Yum! Thanks for sharing the recipe! My only suggestion would be to use less or no salt, because mine came out really salty! Might have been the cajun seasoning, though.

Great recipe, I really enjoyed it!  One alteration: I ended up cooking these at 450F for almost an hour before they became anywhere near crunchy.

A variation to make this Indian-style--use about a tablespoon of chat masala instead of cajun seasoning, and add a splash of lemon juice.  It turned out really delicious. :-)

I tried to do this one from memory and omitted the salt entirely, plus used curry powder instead of cajun seasoning. It was pretty good but my kid wouldn't eat em :/ The other kids at his play group did tho!

Man, oh man! These things are so good! I didn't realize that chickpeas got crispy and crunchy. That is really great. I think I cooked mine for longer than 20min though. I put them in the toaster oven and I kind of forgot about them for a while. I probably cooked them for more like 45min. They came out really crunchy!

these were really good.  i only used 1 tbsp olive oil (which seemed like enough), and an italian spice blend instead of the others since im not a huge fan of hot & spicy stuff.  they definitely need to bake for at least 40 minutes to get even a little crispy it seems though.  i ate them all from the pan while they were still toasty warm.

I also used less oil because I didn't see that it was necessary. It was definitely different, like heavy popcorn. But I like them.

I forgot to say that I added some dried parsley for color and cooked them for longer than the recipe stated. I actually ended up broiling them because I got impatient.

I didn't have time to cook these to total crunchiness, but they did get to this really nice crispness on the outside while staying soft inside that reminded me of seasoned fries Smiley

Once mine started popping I took them out of the oven because some were quite brown. Maybe you should lower the heat next time?

big . . . scratch that . . . HUGE hit with the family. 
I used different seasoning (see spicy fries http://vegweb.com/index.php?topic=11113).  Great snack, sure to taste fantastic with any variety of spice or herbs.  Thanks for sharing this easy snack food!

This is a great snack recipe.  I used just under 2 Tbl of olive oil, plus a little bit of sesame oil, then added finely chopped cilantro and a little curry powder.  Very good.

I FINALLY made this tonight and I was not disappointed!  I baked the chickpeas closer to 40 minutes so they were extra crispy.  They are an absolutly wonderful snack!!

This was a nice snack! I used 1/2 tsp of garam masala with a tbs of chili powder and a sprinkling of black pepper. I took them out of the oven when they started popping (perhaps the heat was up too high) and they crisped up a bit as they cooled. They were soft on the inside and somewhat crispy on the outside. My husband and I couldn't stop eating them. They were all gone in about 10 minutes... Next time I'll have to make a double batch. I suspect the secret to this is to leave them in the oven for a long period of time at a lower temperature. My oven was at 220 Celsius.. Next time I think I'll try 150 Celsius and see what happens....

I agree with everyone else, these were great. Soooo quick and easy and yet another thing I would have never thought to do myself. My dad liked them too, he said, "I could put a bowl of these out instead of chips like at a superbowl party... I could eat a whole bowl by myself," to which I replied, "that's almost exactly what the recipe author wrote!" 

I didn't have any "cajun" spice, I just used some smoked paprika, cayenne, salt and pepper. Baked them in my toaster oven and they only took about 20 minutes total. I did only use about 1/3 of a can of chickpeas, though.
