Favorite Gelling Agents for Ice Cream?

There are so many-- xantham gum, carob bean gum, guar gum, agar agar, carageenan / aka irish moss, etc...what are your favorite gelling agents in ice cream recipes?
also, favorite sweeteners? i usually use an agave/maple syrup blend....
If I make the ice cream base with coconut milk, I use arrowroot. If I make it with cashews, it doesn't need anything. I usually use turbinado sugar and stevia if it's going in the blender first.

cornstarch usually works, just heat a little of the liquid with it
