fancy cocktail party type food

I'm hosting an avon party next week & am trying to plan out what to serve. I put on the invitations there will be martinis & tapas, so ppeople don't expect a full meal, but I want to really impress everyone. I plan on making hummus and/or baba ganosh with pita chips & a variety of roasted/marinated veggies, I'll also have a fruit platter of some sort, and I was thinking spring rolls & maybe dumplings of some kind. What else should I have? I'd rather not try to make anything that seems really strange to most people & I won't really have time for anything labor intensive.
Whenever I'm trying to be fancy or impress people, I will make my veggie sushi.
Even people who've never had real sushi before tend to be open to it and most people are quite impressed that I make my own. Labor intensive, kinda, but usually worth it.

you don't have to make them into triangles. just little mini muffin cups would probably be good. anything in phyllo would work, really.
how about the crustless quiches from fatfreevegan? or an easy vegan bruschetta on toasted italian bread? you can buy premade phyllo dough cups and fill them with a tofu ricotta and top with sauteed baby bella mushrooms..
have you checked out the appetizer section on vegweb? im sure theres tons of things that i wouldnt think of.
hey lisa, look at this thread: vegan table review, and see if anything sounds good. It's all "entertaining" food, so the cookbook was written with parties in mind (I gather). If you want any recipes, let me know.

I find those pre made phyllo cups to be dry, bland and very not worth it. The quiche idea is a good one. Maybe put a tiny circle of sticky rice in the bottom of muffin cups then add the quiche, just to give it a good base. You could also make a few types of quiche flavors out of one batch; spinach, broccoli, mushroom.
You could make rice paper summer rolls full of julienne veggies, bean sprouts, avocado and even some marinated baked tofu if you feel daring!
Stuffed mushrooms would be yummy. An artichoke dip is always a hit. Olive tapenade is the most delicious thing in the world in my opinion. Serve it with some garlic chibata stick slices.
These are the things I would want to nibble on at a fun cocktail party!
