different types of bean cutlets

we were getting near the bottom of or cupboard and needing to make something to bring to work .we ended up making a mixed up cutlet using romano beans instead of chickpeas. It wasn t that bad i think it would great for spaghetti and bean balls ;) has anyone else made chickpea cutlets with out chickpeas?
Oh totally-- have done them with pinto beans, black beans, navy beans, etc. I adore chickpeas, so when I cook up a big batch of them I tend to eat them all too quickly to make cutlets, whereas if I make a pound of navy beans they stick around long enough to make a couple dishes with them.
i've used butter beans for cutlets before (not the chickpea cutlet recipe, but something off of vegan dad that called for pinto beans, which i didn't have).

I'm with you because I have 3 pounds of sweet potatoes to use up and SP cutlets sound really, really good! I've also been thinking about trying to make a "sausage" patty using that recipe.
