Cooking with beer!
Hi Vegwebbers!
Christmas is finally over (mine lasted two weeks and I'll need therapy before I can talk sanely about it), but I have accumulated an extraordinary amount of cheap canned beer left over from the festivities. I like to drink beer mind you but I have standards and Miller lite and Milwaukee's Best don't make the cut. I have about 30 cans to either use or give away, and I'll likely do a bit of both.
I like to make my greens with beer (one can down) and I made some beer bread yesterday morning (two...)....twenty-eight to go. I've seen some recipes on here for chili with beer, that will probably be next and we eat greens a lot, so I can safely reserve 8-10 over the next few weeks for that...seventeen to go.
Anyone got any special recipes that use cheap beer?

I don't know how you are about fried foods but beer mixed with an equal amount of flour makes a gread batter for onion rings, zuchinni spears, oh any veggie really.
All you do is mix the beer and the flour and let sit for 4 hours or so before using.

I also made BBQ sauce with beer once-- that was tasty!
theres a pizza dough recipe somewhere on here that uses it instead of yeast/water.
michael likes to boil pasta in soda. i bet boiling pasta in beer would be a little bit better, and a good way to use it! because you dont really have to drink it all. and if you let it simmer down, you could use it as a sauce then too.

whoa whoa whoa what??? ive NEVER heard of anyone doing this! what does it do? what flavors does he use? im totally curious about this now.. does he just use 1 can and the rest water or all pop? does it make his pasta taste like cream soda?
although this is a guy that gave you dry oatmeal to eat so idk....

I love the pasta idea. I, too am curious about the soda. Does he use cola or sprite? Hmmmm....interesting.
And I totally forgot about a good beer batter; although after these holidays, I am not sure I need anything fried for a long long time.

That soda thing is ...different...but then my mother cooked roasts in Dr. Pepper....and there is that saurkraut cake....so maybe...
I wonder if vegan sausages could be simmered in beer? I see people doing that with german sausages during some of the summer festivals.
1. I second the beer batter. There's a recipe on this site for beer tofu that I've had success with.
2. One of my starving-students cookbooks has a recipe for beer stew. I'm not a gigantic fan of stew in general, but this is yummy. (The recipe I use asks for a dark ale or stout, so Miller Lite won't do it, but perhaps there's a way to experiment here.)
3. One of my personal favorites is beer pancakes. Yum.

Borracho beans! Cook yer pintos, black beans, whatever with a little bit of beer, it tastes great. I discovered recently that beans taste much better with something a little fizzy thrown in the pot, like vinegar, wine, lime juice, etc. The beer works the same way. It gives the beans almost a fruity sort of taste!

Great idea! I just filled up a crock pot with two cans and a bag of mixed beans and spices for dinner.
