Coconut rice and ...

so, the deal is, I'm super tired, coming down with a cold, and seem to have left my inspiration at home, or under the bed, or something.

My brother and his vegetarian girlfriend are visiting for the weekend, I've got half a tin of coconut milk I want to use up, and I was thinking of making a yummy coconut rice recipe, perfect for going with thai food.  Problem a) abovementioned girlfriend is even more of a wuss than my parents when it comes to spicy food, problem b) I don't have, and don't want to buy, any curry pastes, and so many of the thai recipes on here seem to use them as a base.

Anyone have any mildly-spiced sure-fire tasty from-scratch thai-inspired recipe ideas?  My brain's too exhausted to think for itself today, all and any help hugely appreciated :)

1, what do you have on hand?

If you have potatoes/yams, and squash....you can make a curry w/ the pureed squash and coconut milk....I've done it w/ butternut squash...MMMMMMMMMMMM
look up tom kha soups (they're the ones w/ coconut milk in 'em)
spring rolls
peanut noodles
....anyone else?

Coconut rice as a side dish goes with just about any veggie-type stirfry, doesn't have to be spicey.
I just use this base sauce: 3 Tablespoons each soysauce and dry white wine (I use cheap sherry), a mashed clove of garlic, some ginger and a pinch of sugar. Add it when your veggies are crispy tender and let it bubble a bit in the pan. Whether you thicken or not is up to you.

so my brain actually unfroze and it was all good, just made a yummy spinach-coconut-ginger rice thingie and everyone was happy :-D

But:

this sounds like pure gold. Things I always have, easy, fast, delicious sounding.  I don't know why, but I am always soo much better at improvising with pasta-type sauces than stirfry, so I will definitely remember this one, cheers :)
