Club Vitamix!!!!
Here's a thread to post vitamix recipes, success stories, and even things you don't like about the Vitamix. If you don't have one, feel free to lurk and maybe you'll be convinced to get one.
So far, I my favorite thing I have made is Orange Sorbet. (oranges, sugar, ice). It made so much and I put leftovers in the fridge. In the morning it was liquid and tasted like Orange Julius!
Here's something I don't like: I made hummus and it was really hard to get it all out from under the blades. Am i missing something here? It seriously took me like 10 minutes and I still didn't get all of it. I just gave up.
The hummus was very creamy like peanut butter but not like in real Mediterranean Restaurants. My sister said try removing the skin from the chic peas first!
I do not have the dry grinder blades. Do any of you? Is it worth getting?
Tonight its chocolate peanut butter icecream using coconut milk.
Ah, the joys of owning a Vitamix. I treated myself with Christmas money about five years ago after pining for years before that. Since I was using Christmas money, I went all out and got the separate dry container as well. I don't own a separate blender, food processor, juicer, grain/spice grinder, or soymilk maker.
First of all, I use the Vitamix probably 2-3 times a day. I use it for everything. My only complaint (like little2ant) is that I have never come up with a great way to get everything out of it. I use a very flexible, narrow rubber scraper and sort of squish it up the sides from around the blades. Keep turning the blades and scooping it up the sides. Not very efficient at all, but the best I have come up with after years of trying (fingers also work well ;)). I have also found that small amounts of food don't do well either, pieces just get trapped under the blades.
So, what do I make? Smoothies with frozen fruit, salsas, dips, salad dressings, pie fillings, cocktails, ice cream/sorbets, and soy/nut milks. I use it to chop up veggies (like carrots and onions) for salads, soups, and sauteing, I grind my own flour from whole grains and I've used it to knead bread dough, I blend soups I want to be super-creamy, batters I want to be smooth, and I whip things I want to be frothy (like egg replacer). I throw in nuts for chopped pieces/flour/butters. Seriously, I could go on all day thinking of ways I have used that machine over the years.
I think my Vitamix is the most important piece of equipment I have in my kitchen. I would be hard-pressed to live without it after having it for so many years now. I use the dry container almost as much as the regular container, so I would recommend it if you bake a lot and can get your hands on bulk grains. I would also recommend following the directions about how to chop and grind or you may end up with juice or butter when you just want chopped pieces.
Oh, favorite recipe? Right now it's chocolate chunk peanut butter ice cream. Two or three frozen bananas in pieces, sprinkle of powdered stevia, couple TB of dark cocoa powder. Blend until smooth and frozen. Then drop a couple of huge dollops of peanut butter and a handful of chocolate chips in and blend on 2 or 3 until the chips are broken up and the PB is swirled through. Scoop into bowls and lick out the container!!
oooo krs. that ice cream sounds good! ice cream is my number one dish to make. hehe. my dad bought the vitamix for me for x mas because hes all about healthy foods. i dont think he was too happy to find out that i make ice cream with it more than anything healthy. haha. i also make nut milks. instead of buying milk (which usually goes bad) i just throw a handful of nuts and water in.
i think we should start compiling ice cream recipes for vitamixes. : )

My dinner almost every single night is a raw green soup:
Blend: Greens (kale, salad, spinach, whatever), Cucumber, Avocado, Garlic, Broccoli, Celery, Water, Braggs Amino/soy sauce/tamari
Then in a bowl (NOT blended) I put some edamame (not in the shell obviously), nutritional yeast, fresh salsa, Udos 369 oil, and some herbs and spices.
It works so good in the Vitamix because I hardly have to cut anything. Just throw big chunks of veggies and it comes out smooth in seconds. That's my favorite thing, but I'm glad you started this club cause I can always use new things to make in it!
Last night I made a cilantro pesto, a tomatillo salsa, AND the lunch box fondue from schmooed food. I lurrrrve my viitamix!
mmm i made a soup last night that needed to be blended, since i could use the variable setting, i put the soup in there hot and blended it on the lowest setting, increasing the speed slowly so that it wouldnt spatter. it was awesome!!! i didnt have to wait for the soup to cool down at all.
I made that chocolate icecream similar to what krs described. I liked it but I find that its too cold to enjoy sometimes!
I froze some and had it later-it wasn't as good. seemed more icey. I guess its best "fresh". It was also way too cold to enjoy....i hate icecream headaches.
I still need to try it with coconut milk. for now I'm using this stuff i found at the closeout store called "mimicreme"....its dairy and soy free cream, sort of like heavy whipping cream. it was only 99 cents for a huge thing-now im gonna get more! The base is almond and cashew I think.
for ice cream, instead of blending just ice cubes, i like to keep frozen coconut milk cubes, bananas and an array of fruit to use instead of ice cubes. yummmm.

I might try making that raw green soup. It's sounds really good. I guess I could put in some cayenne pepper if I wanted a sense of heat. What other hot spices are out there?

Red pepper flakes, hot chili powder, hot curry powder (I typed "power" at first)..........that's all I've got right now.
Mainly I just wanted to post so that I could be a member of the club....w/o really being one.

Heh, I have to confess it took me forever to take mine out for the first ride... But since then, I use it all the time. Like probably 6 times a week. And that's even in conjunction with my food processor, which I use like 4 times a week. I never buy salsa or sauces or pre-made soups anymore-- I get immense pleasure out of zizzzzzzing everything myself. Lots of silken tofu sauces, pureed soups, etc. I make a big batch of green salsa, some roasted baba ganoush, usually hummus, all these things once a week to nosh on during the week... Still haven't ground any grains yet, but another delicious meal at the Indian restaurant the other day reminded me that I'm going to have to grind up some rice and lentils for dosa!! Mmmmm.
for those of you who have had it for a while... is it not good to grind stuffs in the non "grinding" jar/with that blade? i didn't buy it because it was an extra $100 and i didn't think i would use it much, but if i ever do want to grind stuff (maybe flax, quinoa...), can i?
Trying to grind in the non-grinding jar doesn't work very well, I've found (accidentally). The blades are really different. I don't think it would necessarily hurt the liquid jar to use it, I just don't think it really works. I actually use the grinding jar quite a bit. I grind all my own grain into flour, so I think it's definitely worth it. But if you prefer to buy flour, it might not make sense to fork over the cash for it.

I'm not doing caffiene at the moment (except chocolate) so I've been making this:
2 TB of Roma (coffee-like grain beverage)
cup of warm/hot milk of your choice
some sort of chocolate (chips or hot coco powder)
whiz it and you get a frothy, delicious beverage better than your local coffee shops! I want to set up a stand on the corner and sell them to my neighbors.
Have you made baby food yet?
so far i made a pb mango smoothie and ice cream. yay! it's been about 4 hours!
