I have some tofu that expires today. Is it possible to freeze it? Should I do anything with it first -like open the package and cut it into cubes?

I know that some freeze it before they cook it in order to firm it up before cutting, etc, so it doesn't crumble, but I am unsure if it will "keep" by freezing it.

Yeah, freeze it. It will be fine. I mean, if it's already bad..then it will be bad frozen tofu...but it will be fine. You don't need to cut it up, but you can. You'll just have to defrost it later. And squeeze it.

I just throw the whole carton in the freezer. Gonna have to press the liquid out either way when you are ready to use it. And when that time comes, just let the package defrost, open it, put the tofu between two plates, and put something heavy on top. Let it drain for perhaps a half hour or so.
I actually wouldn't cut it up before hand. You might end up with some soggy tofu cubes. But I've never tried it.

Nah, they won't be soggy. They will just be cubes that have been frozen and thawed..instead of the block. It all comes out the same. I just freeze my carton, too, but cut it out of the ice block, and defrost it in the microwave in a bowl (for like 8 minutes!), then squeeze the water out. I don't press.

Well, I just do the block...but you could like put a bunch of cubes in your hands and squeeze them...I don't think they'd really fall apart since they've been frozen...but I guess they might get all squished. Yeah, just don't cube them.

Oh I love frozen tofu! I went to the Asian market over a month ago and I bought one of those giant tubs of tofu with like 6 blocks floating around in it. I took them out of the bucket and individually wrapped and froze them. Whenever I feel like eating tofu now, I just take a block out of the freezer and pop it in the fridge for a day. Or if I am really craving it, I just run some water over the thing and squeeze it.
I have frozen the regular packages of tofu, like you seem to have, also. Like KMK, I usually just throw the whole carton in there. That does result in a tofu frozen into a block of ice though. So, if you prefer, you could drain it first and put it in a tupperware or something. That might reduce the defrosting time. I probably wouldn't cube it though. That would make for lots of squeezing of little tofu cubes. It's probably easier to just squish one big block, no?
Also, be aware that freezing tofu changes the texture. For the better, I think. It makes it chewier. It's good! I actually just ate some tofu that I had in the freezer.

For thawing, I just take it out the day before and thaw on the countertop. Then the fact that it's in an ice block is irrelevant. You have to know ahead when you're gonna use it though.

with one brand of tofu, every time we froze it, when it came out of the freezer it smelled/tasted like bleach!! the plastic seeped into the tofu in the freezer making it taste awful. I would take it out of the container and put it in a freezer safe bag.

I cube my tofu before I freeze it. Then it takes less time to thaw, and is already cubed for my dish. I've never had a problem with soggy cubes, but you could always put them in some paper towels and give a squeeze.

If you have a freezer that's on top of your fridge, make sure your tofu is in there good. I have a tendancy to just throw stuff in my freezer, and once a frozen brick of tofu came flying out and smoked my boyfriend in the face. Man those things get MOTHER HARD. It was really funny, especially since he used the frozen brick to ice his bruise. I mean... aww muffin...

I totally bought pre-cubed tofu and stuck it in the freezer in its package for weeks.
Then, I thawed it in a bowl of hot water when I remembered it and decided to use it. Took like 10 minutes tops.
THEN... I drained the water out of the package, put the cubes in a plastic bowl... got another plastic bowl and put that on top, as if stacking them.
Turned it upside down and pressed the bowls together over the sink.
Cubed, thawed, and fully-drained tofu in 10 minutes!
