Does anyone have an amazing vegan blondie recipe? A lot of nonveg recipes on the web are like: ten lbs of butter, 50 eggs, 2 bags of brown sugar and 1 pinch of flour.
I've tried koshering up a coulpe of nonveg recipes, and while the results are ok, they're certainly NOT amazing.....
The one at ppk.com is pretty darn good--and even non-vegans love them! I have made them both with the oil and then with soy yogurt instead of oil, loved both. I top them with raw cashews and coconut before baking them...the smell is amazing. Best of luck!
I really like the recipe in Vegan With A Vengeance. It has raspberries though, but if you want a plain I guess you can leave it out. :)
Try using some vegan yellow or white cake mix as a base... ;)
I was looking for a good blondie recipe a while ago and made one from The Vegan Chef (http://www.veganchef.com/blondies.htm), and I think I made them without the chocolate chips and with walnuts instead of almonds. It was yummy but more like a cake than a blondie, I think it should have been more moist for that. Maybe subbing agave syrup for the granulated sugar might make it more moist...
Definitely let me know if you find a good recipe because I don't like brownies but used to love blondies before going vegan.

not to steal the thread but is there anything I can sub for the soy-yogurt called for in this recipe? I'm not a fan of it and so I don't normally buy it and would prefer to find somethign I use regularly. Thanks!

Soy yogurt can function in different ways. One of them might be that soy yogurt is acidic and helps the baking soda to make the blondies rise. In that case I would blend some silken tofu with something acidic (vinegar, lemon juice, cream or tartar, etc.) and just use that in the same amounts you would use the soy yogurt. If it is also meant to sweeten (since most soy yogurt is sweet), I would add a little bit of sweetener to the above mentioned. I think that would work out.
i never but soy yogurt, but i really wanna try these...
in responce to VEGANNA, i think I'll try homemade vegan mayonnaise! its a vinegar based recipe.....

What is a Blondie? I've never heard of them before. I don't think we have them here in NZ.

A blondie is like a bar cookie. It's called a blondie because it's kind of like a brownie, but blonde :P
I really want to try the banana peanut butter chocolate chip ones by cheflindsay. Not so traditional, but how could you go wrong with bananas and peanut butter and chocolate?
i like the ones on the ppk, though they stayed perpetually slightly underbaked.
I think you could maybe add some liquid to chocolate chip cookie dough (minus chocolate chips) and bake it in a pan; it's a similar thing - brown sugar/molasses/whatnot.
Though pb banana ones sound good...
both of the ones in VWAV are great. You can sub any flavor fruit preserves in the chocolate one. I used blueberry preserves once and it turned out great.
And the Macadamia one is just something special. mmm mmm mmm
