Best vegan cake recipe to freeze??
I'm looking into make my own wedding cake and cupcakes...what I want to do is bake the cake/cupcakes ahead of time (like a week or two) freeze them and then thaw them and frost/decorate day of. Actually I will probably delegate the frosting and decorating of the cake to a friend, I might be too busy...
But anyways, which recipes on this website do you think will hold up to being frozen the best? If you had to guess, to you think a cake thats esteemed for being "moist" would hold up better to being frozen or a cake thats known for being "light and fluffy"? We are thinking of doing some cupcakes in chocolate and some in white or yellow cake...basically we are not too picky on flavor. just nothing too out of the ordinary.
I have 9 1/2 weeks till the wedding, so I can try a few recipes before hand...I just don't want to be baking too many cakes., mainly cause we don't eat a lot of sweets round these parts. ha ha.
My mom's carrot cake recipe says that it is best after three weeks. So we often make it ahead of time and then frost the day of consumption. It is also arguably my favorite cake that she makes (and she makes a lot). The only non-vegan item is eggs, ener-g egg replacer does a plenty fine job in this recipe. I can attest that it is probably the hardest to ruin cake as well, as I have succesfully made it at least a dozen times. It's not posted on VW, but PM or email if you want the recipe.
Having said that, it is of course...carrot cake, not yellow or chocolate or another standard.
As a general rule I would say that moist oil-based cakes will hold up best.
Ah! I just read on someone's blog about making their own cupcakes for their wedding and then freezing them, thawing them, and icing them. They also had a friend help frost their cupcakes, too! Here it is:

My fiance and I both love carrot cake...I wonder how that would be to decorate...Do you think with carrot cake it HAS to have cream chese frosting? I found lots of vegan cream cheese frostings but they all require tofuti cream cheese and that stuff is expensive...maybe not as bad as I remember though...all the same, I wonder if a vegan butter cream frosting would work....? Ill try to PM you...I dont know if I can cus Im not a member...hummm...

I usually just do a vanilla buttercream frosting for my carrot cake (I'm not paying $4 for Tofutti, then putting it in frosting!). This turns out delicious, and I've given these cupcakes away to lots of people, and they all rave about the frosting.
My fiance and I both love carrot cake...I wonder how that would be to decorate...Do you think with carrot cake it HAS to have cream chese frosting? I found lots of vegan cream cheese frostings but they all require tofuti cream cheese and that stuff is expensive...maybe not as bad as I remember though...all the same, I wonder if a vegan butter cream frosting would work....? This might sound bizarre, but I swear it is wonderful. I like the lime frosting for the coconut lime cupcakes in VCTOTW for frosting carrot cakes. The lime imparts the same kind of tart taste of cream cheese I think. I discovered this by accident when I had made a carrot cake and discovered some left over lime frosting deep in the freezer.
Heck no! It's your wedding, you can put whatever frosting you want on it. I think just about anything will taste good within reason. That lime frosting idea sounds great. You could also try a frosting with ginger in it if you wanted to be crazy (ginger+carrot cake=heaven). Honestly, as long as it has plenty of sugar and some fat, people will like it.
