African themed party!

We have a friend who has just come back from Africa, and for girl's night out this month we're doing an African-themed party for her.  I realize Africa is a huge and diverse continent, but I'd still like all of your input on food.  I have serveral ideas already--a really, really, REALLY tasty recipe I have for Nigerian-seasoned baked beans and a Moroccan "chili."  I've found that millet has been used as a staple grain in East Africa before so I thought I'd make this (even though there's really only one African ingredient) with an African-inspired dipping sauce:

This website is really good for African food ideas I think. It is not vegan in it's entirety, but there are many, many recipes that are, so I might use it fo inspiration (this is where I got the recipe for the really, really REALLY good Nigerian-seasoned baked beans):

zap mamma is a really great all girl a'capella african group.  if youre looking for african music as well.

i lived with a bunch of boys from africa, all they would cook was fish, they were from the west coast, and one of their girlfriends made peanut soup almost weekly.  i couldnt believe how they cooked their fish too!  they would buy a whole fish, skin, eyes, tail, everything all intact, lay it in the oven and pour sauce over it, then put it on a plate in the middle of the table and just pick at it with their hands.  what an experience.  even though the whole fish thing was gross to me, it was still really interesting about how they prepared food.

anyways.  back to vegan recipes...

oo you could use this as a dessert, baked bananas with caramel and chocolate dips with a bowl of peanuts! MMM  i dont know if thats african.  but it sounds good to me.

We have a large community from East Africa in my city and they produce a lot of good food. At the Farmers Markets a Somali family has a booth and I tried to find their brochure to get you the number, but this restaurant is good too. It is a highly respected veg friendly Ethiopian restaurant in my area that might be able to give you some suggestions.

Ethiopians really don't eat dessert, but I know of one that's a dry version of Greek Baklava.
Jalaato, a Somali desert, is made by freezing naturally sweet fruits with a stick in the middle. Commonly used fruits in Somali food are mango, guava, banana, and grapefruit. They are big on snacks and desserts, such as one that's a coconut version of a rice crispy square.
