I guess I've never really known what mulligatawny is. After looking at/starting this recipe, I looked up some online recipes, and I think I would prefer those over this. It uses coconut instead of coconut milk, but I don't think that adds enough flavor, and it makes a weird texture. I didn't even add the cauliflower, and it needed more liquid. Needs more spice, too. Hearty and healthy, but not a fave. (AC)

I was drawn to this because I mushrooms anad barely go very well together. I used rehydraded dried shitakes and for the broth used the liquid from the shitakes and added some veggie broth. This was a quick, easy to make, hearty and delicious meal. (tweety)

While it was very delicious, it calls for WAYYYY too much mayo. I doubled the recipe in total, which meant it called for a full cup of mayo (to one 8-oz package of tempeh!!!) I cut back to 3/4 cup and it was still way too much. Next time I'll only use 1/4 cup. I'm only complaining because it was so fatty from the mayo that it gave me terrible reflux However, reflux aside, it was quite tasty and a very good version of chicken salad! Fresh tomato salsa
I was hesitant to make this, because I can't find the cilantro in my dad's garden, but I wanted some fresh salsa with my queso! It actually turned out really well. I used 4 tomatoes, 3 garlics, and added the optional paprika and olives. I used 3 jalapenos, but also added some cayenne. I followed the recipe (minus cilantro), but had to add quite a bit of water for a salsa consistency. Probably close to a cup, or more. No salt in the recipe, but it definitely needs salt. Quick, fresh, and not bad at all. Would be even fresher with cilantro. (AC)

I usually free hand my own hummus, so I wanted to try something different. It didn't come out tasting that different, because the basic ingredients are all there. Pretty good. I think 3/4 cup tahini is way too much. I probably used 1/4, and it was good. I've never had onions, or cooked garlic in hummus, so that was a bit unnecessary. I guess it makes the garlic more mild, but I don't need that. I added the jalapeno. Pretty good, but I'll stick with regular. eta: BUT..it was apparently P's fave hummus, ever! (AC)

simple, hearty and flavorful dish. The instructions accurately state "You can whip this up in an instant." These beans are flavored with chopped carrots, onions, diced tomatoes and corn simmering in a chili-curry base. The curry paste makes this recipe special because it adds hints of cumin, cilantro, tamarind and other wonderful spices to the dish. I used black beans, instead of kidney, and left out the mushrooms. Served it over cooked rice, instead of adding rice to the chili. I made these chili beans when I was sick. It was easy, makes a lot so you can store or freeze for later, and it also cleared my sinuses. Since the recipe calls for chili powder, pepper and curry paste, you might want to gradually add to your desired level of spiciness, especially if you have a spicy hot curry paste or added chilies in the can of diced tomatoes. Really yummy. I didn't have the peppers, so I used cayenne. I think I used less than 1/2 cup breadcrumbs, and they held together pretty well. I don't know that the flour is necessary, and definitely not 1/2 cup. It might make them stick together a little better, but it made them crumbly on the outsides. The flavor is really good, and texture is not bad. Not perfect, because they are still a bit mushy throughout. Probably not a go-to recipe, but good. I had them with some melted daiya and jalapenos. These are really good corn muffins. I was skeptical, because my batter was way thick (before corn) with 1/2 cup water (like dough), so I added another 1/4 cup. I added a whole can of rinsed corn, so it was more than 1 cup. Very good. They are really moist, and flavorful with the corn. Some of my favorite cornbread. I didn't measure the sweetener, so I probably added more. I like a sweet cornbread. (AC)
Easy biscuits
These definitely are easy to make and turned out great! I substituted canola oil for the margarine and cooked them in a muffin tin rather than rolling them out and cutting biscuits. The recipe says it makes 6, but I got 8 pretty big biscuits. They turned out light and fluffy inside and lightly browned on the outside. Next time I'll reduce the salt a little because they're just a touch too salty for me. 3/4 cup of soy milk was plenty, so I would recommend starting there and only add more if the dough is dry. I was craving a chocolate chip cookie really bad. But I was too tired(and maybe a little too impatient) to scoop spoon-sized cookie batter on cookie sheets one by one. This recipe is good, especially if you're new to vegan baking, because it is simple and uses familiar, easy-to-find ingredients. No Ener-G or ground flax seed egg replacers. No Earth Balance. You can even use water instead of soy milk. I stirred everything with a wooden spoon and pressed the batter with spatula in a pan. The batter seemed too oily to me. But after 25 minutes, I pulled out a tray of cookie bars from the oven with an evenly puffed top that didn't look oily. The cookie bars were slightly more bread-like than cookie-like to me. Which is not a bad thing. But, dammit, I was craving a chocolate chip cookie. So I was a little disappointed. Next time I might use melted Earth Balance to replace some of the oil, brown sugar and about 1/4 to 1/2 cup more chocolate chips to get that buttery, toffee-like chocolate chip cookie taste I so love. The Chocolate Chip Bars tasted better the next day. I brought them to the office and omni coworkers enjoyed them. Consumed them all by lunch, leaving me but a tin of cookie, or bread, crumbs. The recipe calls for cinnamon, nutmeg, ground ginger, cumin, cardamom, pepper, cayenne pepper. I left out the cayenne pepper and only put a couple shakes of pepper. Cookies are easy to make. Butternut Tomato Soup: This is great. A perfect blend of tomato and squash soup. It's creamy, flavourful, and not too tomato-y which is big for me since I'm not huge on hunks of tomatoes in soup.
Mulligatawny soup: This was the first soup I ever made, so at the time I thought it labour intensive due to the chopping of all of the veggies. But it was so good, and I'm looking forward to making it again sometime soon.
Simply Lovely Carrot Soup: This is such an easy soup to make. I make it when I don't have a lot of time to cook, but want something delicious. It's one of my favourite carrot soups (but nothing beats the one from VWAV)
Spicy Creamy Tomato Soup: Not all that creamy actually, but I made mine with almond milk instead of blended tofu so that could have been the difference...
Mum's Bean and Cheese Casserole: This is surprisingly good considering I'm not huge on baked beans. It's simple to through together and very satisfying.
Potato Cheese Perogies: If you have the time and patience to makes these, do! They are so yummy! I always loved cheese perogies and these are just as good, if not better than non-vegan ones.
Applesauce Bread: I want to try making this again. When i made it for the first time, it was one of my first times baking and I was increadibly stupid in the kitchen. My oven rack was on one of the upper levels, so the bread was crispy on the outside and raw dough on the inside :-[ oops.
Applesauce Muffins: Meh. Kind of boring. I'm not making them again.
Country Corn Muffins: Nice and easy. Quick to whip up alongside a soup, stew, or chili. I do like the cornbread recipe from La Dolce Vegan more, though.
Gingerbread: Totally awesome. I'm making this at the holidays from now on. I suggest using blackstrap molasses. Yum!
Oatmeal Bread: See results for Applesauce bread. Oops :-[
Maple Nut Soup Muffins: Bland. Not a fan.
Soda Bread: I make this quite often. It's nice, dense, moist and delicious. Goes great with soup (I really recommend it with the chili from this book - hint, hint ;)b )
Auntie Bonnie's Wacky Cake: Just your basic wacky cake. Nice, easy, yummy. Whips up in a breeze.
Chocolate Chip Cookie Bars: My parents love these. They're quite easy to whip up. I ususally just make half batches of these because they're just so thick and rich...but good. Very good.
Classic Chocolate Chip Cookies: Pretty good, but not as good as the ones from VWAV. They're kinda puffy. :\
Fresh tomato salsa
I was hesitant to make this, because I can't find the cilantro in my dad's garden, but I wanted some fresh salsa with my queso! It actually turned out really well. I used 4 tomatoes, 3 garlics, and added the optional paprika and olives. I used 3 jalapenos, but also added some cayenne. I followed the recipe (minus cilantro), but had to add quite a bit of water for a salsa consistency. Probably close to a cup, or more. No salt in the recipe, but it definitely needs salt. Quick, fresh, and not bad at all. Would be even fresher with cilantro.

Green Goddess Dressing - yuck, double yuck. Very foul tasting. Hated it. (tweety)
Creamy Italian Dressing - Pretty awful tasting. Nuff said (tweety)
Fabulous French Dressing - Pretty good, but the recipe only makes a small amount. The ratio of oil to vinegar doesn't suit me as it's too oily. It calls for 1/4 cup of oil to only 2 tbs of vinegar. (tweety)
Holy moly hummus
I usually free hand my own hummus, so I wanted to try something different. It didn't come out tasting that different, because the basic ingredients are all there. Pretty good. I think 3/4 cup tahini is way too much. I probably used 1/4, and it was good. I've never had onions, or cooked garlic in hummus, so that was a bit unnecessary. I guess it makes the garlic more mild, but I don't need that. I added the jalapeno. Pretty good, but I'll stick with regular.

Country corn muffins
These are really good corn muffins. I was skeptical, because my batter was way thick (before corn) with 1/2 cup water (like dough), so I added another 1/4 cup. I added a whole can of rinsed corn, so it was more than 1 cup. Very good. They are really moist, and flavorful with the corn. Some of my favorite cornbread. I didn't measure the sweetener, so I probably added more. I like a sweet cornbread.
Jen's Chocolate Cake - I made these in cupcake form for my sister's 13th birthday. She said they're her favourite vegan cupcake that I've made so far! They are so moist and chocolate-y. I used dutch processed cocoa so they were extra dark and delicious. I'll post a picture of them later after I top them with the fluffy buttercream frosting from Vegan Cupcakes...
Mushroom barley stew - I was drawn to this because I mushrooms anad barely go very well together. I used rehydraded dried shitakes and for the broth used the liquid from the shitakes and added some veggie broth. This was a quick, easy to make, hearty and delicious meal.

Auntie Bonnie's Lively Lentil Stew - pretty straightforward recipe...and good. I like that it used potatoes to make it more hearty. Quite the nutritional powerhouse, low fat and low calorie. I used low sodium canned diced tomatoes instead of fresh tomato option. For the broth I used a low sodium vegan veggie powder by "Vogue Cuisine" called "Instant Vegebase" which was good.

Garden Medley Vegetable Stew - This was much better than I thought it would be, in fact it was delicious. I love tomato and this used 28. oz. can of crushed tomatoes which I love. It wasn't overly spicy and allowed the veggie tomatoey taste to rule.

Faux Eggs Benny- I really like this recipe. I've never had the real thing, but I love how the tomato ties it all together. I usually marinate the tofu for longer.
Potato "Cheese" Perogies- My husband made these, and I thought they were super yum. He didn't have any problems with the dough.
Chocolate Bourbon Pecan Pie- I make this every year around christmas, and give it out as a gift. Everyone loves it, it takes only a couple minutes to throw together, and it's really rich, so it feeds a crowd. I love, love, love this pie.
Curried Pan Fried Potatoes - Pretty good! Had to sub garam masala for the curry paste. Had to add some hot sauce to make it spicy enough for my tastes.
Brainless Banana Pancakes - Favorite vegan pancake recipe I've tried, hands down! I like to use a blend of 1/2 whole wheat, 1/2 white flour and add a teaspoon of cinnamon. Yum!!!
Mashed Garlic Potatoes with Kale - I liked this a lot! I find plain mashed potatoes boring without gravy, but these were great on their own. I bought flax oil specifically for this recipe, but I don't really like the flavor on salads, so it didn't get used up. Will probably omit it next time...don't want to waste another $8 or whatever it was...ugh.
Larry's Re-Fried Beans - Not really memorable for me. It wasn't bad or anything...just didn't stand out as being great.
Sarah's Delicious Chili - Pretty good...probably my 2nd or 3rd favorite chili recipe. (Nothing beats chocolate chili!)
Classic Spinach Lasagna - Love this recipe! Made some for my brother's b-day celebration the other night, and my dad commented that he couldn't even tell that it was somehow different than any other lasagna (aka vegan). Used daiya for the "soy cheese." I've made this with firm and soft tofu, because I can never find medium tofu...works fine either way.
Chocolate Bourbon Pecan Pie - Soooooooooo good! This is one of my all time favorite desserts.
Faux Feta - Ewww...tofu + vinegar + herbs is not a good substitute for feta.
Hawaiian Jerky - Pretty good! I wasn't sure what to expect with tofu jerky. It was a bit greasy and actually got more chewy and jerky-like the longer I stored it. Maybe that means I should have baked it long to begin with? Not totally sure...
Maple Apple Dip - I liked this with apples but enjoyed it the most with fresh pineapple chunks. Easy to make and would probably go over well with kids (and thus why it's placed in the kid's section...) and good for adults too!

I made these today, and they are so delicious! The unfrozen mixture was even great on its own like a little pudding :)
I used faux honey in mine as the sweetener. I'll be making loads of these in the summer ;D
Easy Biscuits
These definitely are easy to make and turned out great! I substituted canola oil for the margarine and cooked them in a muffin tin rather than rolling them out and cutting biscuits. The recipe says it makes 6, but I got 8 pretty big biscuits. They turned out light and fluffy inside and lightly browned on the outside. Next time I'll reduce the salt a little because they're just a touch too salty for me. 3/4 cup of soy milk was plenty, so I would recommend starting there and only add more if the dough is dry.
