This was really good! Took it to a potluck today. Made it last night and let it sit over night in the fridge. It's very fresh and healthy tasting. Everyone enjoyed it! Thanks!
--- wait! I just realized it said 3 cups "COOKED" lima beans. That might have been the problem. I did 3 cups uncooked ones. and since they pretty much double in size, oh wow!
I liked this mix of beans, chilis and sugar... I put them in a tortilla with some sauteed veggies (onion, sweet potato, corn, red bell, and yellow squash) burrito style with soy cheeze.
We really enjoyed this. I used yellow onion instead of green and powdered ginger instead of fresh, because its what I had. Veggies I used were carrots, broccoli, bok choy and bell pepper.
