Delicious! I used almond milk and tried out a suggestion I heard recently - making French toast in a waffle iron  - which turns out to be awesome!

We made this tonight for a "We're hungry, what do we have on hand?" dinner. Quick, easy, tasty. and filling. With some rice and a side of nuked veggies, dinner was ready in 20 minutes.
