I used gluten free flours, 2/3 cup sugar, two types of plums (veryyy ripe) no apple sauce or banana, some enerG egg powder and coconut milk. Fit into a 10 (12?) inch cake pan and a 6 inch cake pan.

I have never even heard of such a thing! My bf is tater tots number 1 fan, so maybe he'll eat a real vegetable or two if I hide them under a layer of them. Thanks for the idea!
Bchef-what sweetener did you use? I like how yours turned out sort of flat and chewy looking, I don't want a puffy cake cookie today! lol, so if you would please let me know soon :)
This sounds amazing, if I'm going to soak my cashews before hand, would I only need to use enough water to cover the one cup of nuts? or how do I work out the water:cashew ratio?
