Fancy (or not) Banana French Toast Sandwich
1 slice of bread or how ever many you need(I find one per person is plenty, pretty rich)
your favorite veg. French toast "egg" batter+1/8 ts each vanilla extract and cinnamon*
2 quarters of a banana
1 tablespoon brown rice "cream cheese"
1 tablespoon almond butter (roasted works the best here)
cinnamon to taste
REAL vanilla extract (Trader Joes: cheap, really good, yellow label, alcohol free)
1 teaspoon maple syrup (or agave nectar)
Lightly spray your skillet with canola oil or spread on some earth balance. Keep on med/low to preheat.
Meanwhile, take one quarter of the banana and cut into 8 nickels. Pick up a piece of soaked bread and lay the banana nickels on one side of the bread.
*Carefully* lay the bread on the skillet banana nickel side down. Repeat this step if you need to according to how many slices you are preparing at a time keeping the heat on med/lo until pan is filled and then you turn it up to med/high.
Set timer for 2 1/2 minutes. check in between too make sure!!
in a small bowl smash remaining banana quarter(s?) in with the almond butter(to sweeten it and make easier to spread)
flip your toast(s) if ready. cook an additional 1-2 minutes and spread with almond butter mixture.
If you want it fancier then.....
In another small bowl mix rice "cream cheese", agave or maple syrup, cinnamon to taste and about 1/2 capfuls full of vanilla extract. Put into a zip bag and cut tiny hole in the corner. Pipe into little swirls or whatever on top of the almond butter mixture.

*when making the batter for several people figure 1/8 of a teaspoon per slice of bread is tasty
