Absolutely Divine Microwave Chocolate Cake
3/4 cups flour
1/2 cup sugar
1/8 cup powdered sugar
1 tablespoon cocoa
1/4 teaspoon baking soda
pinch salt
1/2 cup water
1/4 cup vegetable oil
1/2 tablespoon vinegar
1/2 teaspoon vanilla
1/2 cup bittersweet chocolate chips
1. Mix dry ingredients until thoroughly blended. Add liquids and stir to a light brown mixture. Grease 1 quart baking dish.
2. Pour batter into prepared dish. Add chocolate chips and microwave for 1 minute.
3. Stir in the melted chocolate. Microwave1 more minute and let sit until cool.
I know microwaving sounds odd, but trust me, it does not hurt the taste!You can frost if you want, but the cake is very rich by itself and it might just taste better plain. (I have not tried frosting yet, though, so tell me if you find something that works).

Briliiant! I made this today ahem, for breakfast, and it was so fast and easy. I didn't have chocolate chips, so I just added a bit of extra carob, and it was still chocolately and delicious. The other reviewers have massively different cooking times, so it must really depend on the microwave, since 2 mins on my supersonic microwave was just a touch too long. So my advice there is to just watch it, and *before* it looks completely set on top, take it out and give it a test.
Oh, and virginvegan, you're just mad to suggest that one wait for it to cool. :) Gooey warm chocolate cake!!
Mmm... I just made this in 2 little 16 oz ramekin-type casserole dishes. I cooked them on high for 4 min 30 seconds. I probably should have left it at 4 min - the top seemed just cooked but the bottom got a little dry. I also hesitated to fully mix in the chocolate chips to try to get a gooey effect, but next time I'll just mix them on in more thoroughly to get a more chocolately flavor all the way to the bottom. It was very good! I served it with some vegan whipped topping I happened to find in my supermarket's Kosher section tonight.
like keda, i used 1/3 of the ingredients for a smaller cake. unlike keda, i microwaved at full power. i misread her instructions and thought it needed to be in for 4 minutes.. thankfully at around 2 minutes i took it out with plans of swirling some pb and marshmallow topping into the "partially cooked" cake. well, it was done! and perfectly fluffy and moist. i ended up still putting the extras on top and they got all melty. only thing i'd change in the future would to add more cocoa, the chocolatey flavor was pretty subtle. delicious though!
I made this again but instead of putting chocolate chips in it, here is what I did. After mixing the cake up and pouring it into the dish, I made a type of frosting/icing. I mixed some cocoa powder, confectioners sugar, and some soy creamer until it was thinner than a frosting, but thicker than an icing. I then poured it all over the cake. I nuked it for 3 minutes and when I took it out, it was like a chocolate lava cake bc the frosting mixture seeped in and made little canals of yummy goodness! Also, as long as you don't overcook it, this cake is SO moist for having been cooked in the microwave. 3 minutes is perfect in my oven. So YUM :)>>>!
This was good for a quick fix, a little dry, but that could have been my fault because I didn't measure exactly since I scaled the recipe down to a third. I made a quick throw together pb icing, conf. sugar, pb, and soy creamer. Definately did the job, Im stuffed and sick now!

this is amazing! the texture is SO fluffy and better than some of the dense oven-baked vegan cakes.
i omitted the chocolate chips.
i replaced the powdered sugar with 1 tbsp cornstarch and 1 tbsp sugar.
i made a peanut butter frosting, and it was delicious. i can't wait to try this with chocolate chips.
This was divine. I didn't use any chocolate chips and used applesauce in place of the oil..I also mixed in a glob of peanut butter ...I then frosted it with a quick peanut butter frosting...tasted like a yummy Reeses cup cake. My guys are trying to convince me to go make another one.
I was very impressed with the texture of it. Also thought since I had no chocolate chips then I could replace it w/coconut flakes. Over all it was good.
I'm going to review this again because I made it today for my second time. Yum! Mine came out very soft and fluffy with melty gooey chocolate chips inside. I scooped some into a bowl and dug in! You know those microwave "cake in a bowl" ads you see on tv? Well I imagine this to be similar to that.
Again far far too easy to make and deadly (when you're on a low sugar diet!)
