Absolutely Divine Microwave Chocolate Cake

What you need: 

3/4 cups flour
1/2 cup sugar
1/8 cup powdered sugar
1 tablespoon cocoa
1/4 teaspoon baking soda
pinch salt
1/2 cup water
1/4 cup vegetable oil
1/2 tablespoon vinegar
1/2 teaspoon vanilla
1/2 cup bittersweet chocolate chips

What you do: 

1. Mix dry ingredients until thoroughly blended. Add liquids and stir to a light brown mixture. Grease 1 quart baking dish.
2. Pour batter into prepared dish. Add chocolate chips and microwave for 1 minute.
3. Stir in the melted chocolate. Microwave1 more minute and let sit until cool.
I know microwaving sounds odd, but trust me, it does not hurt the taste!You can frost if you want, but the cake is very rich by itself and it might just taste better plain. (I have not tried frosting yet, though, so tell me if you find something that works).

SO HOW'D IT GO?

I just made the cake to satisfy a massive craving for chocolate that needed to ba taken care of instantly.
And this cake is just the perfect solution in such cases of emergency :)

A rounded the dough off with a generous teaspoon of apricot preserves, and I really think they improve the overall experience significantly. Raspberry or cherry would certailny work just as well... i might give this a try sometime.

However, the cake ist fluffy, moist, rich and just what I needed.....no too pretty though, but I'll blame my old micrwave for that, the waves just don't seem to spread evenly in that old thing.

This recepie was fun to make, mine needed more time to cook, and I still didn't cook it long enough.
Very moist and yummy, but It stuck to my tupperware so it's not very pretty.
It's a good quick dessert!!

Oh my this recipe was too easy for instant cake gratification! It will surely make me give in to desserts too often!
Mine took about 4 minutes to cook. (woo! 4 minute cake!) It was moist and very yummy. Not anything like oven baked cake but it served my chocolate cake craving very well, thank you!

This cake is delicious!  It's not quite as good as a cake made in a conventional oven but it will definitely do in a pinch.

I substituted applesauce for most of the oil (just topped off the 1/4 c with vegetable oil), used peppermint extract instead of vanilla, and had to cook it in the microwave for several minutes longer.  I think it really depends on how old your microwave is.

I also made a really easy vegan creme de menthe frosting.  Just mix powdered sugar (about a cup) with vegan butter (just a tablespoon or two), soy milk (or soy creamer-- just about a tablespoon), and creme de menthe (about a tablespoon).  Play around with the quantities until you get the amount and the consistency you want.  It's so good!

Wow this recipe is amazing. It was my first time baking a vegan cake AND it was made in the microwave. I was stunned and couldn't believe how good it turned out! My whole family loved it. Thank you for this recipe.

I have to say that I was actually pleasantly surprised! I used a 1.5 qt. rectangle pyrex dish and had to nuke it for 5 min. because at 2 min. it was still uncooked. Next time I will try 4- 4 1/2 min. because I think 5 minutes was just a tad too long. I didn't have any chocolate chips, so I made a simple powdered sugar glaze. I used 1/2 c. powderd sugar and 1 T. water. It's really sweet, but we like it that way and it covered our little cake perfectly! I love how quickly this can be thrown together and my kids and I really enjoyed it. I also want to try making it with cherry preserves and chocolate chips! :P Thanks for the recipe...much appreciated!

i skipped chocolate chips and didn't miss them. i also used only 1/3 of the ingredients because i was making it for myself. baked in 4x4 inch plastic container on 50% power for 4.5 minutes.
served with coloured shreded coconut. yum!

I refuse to try this recipe; in fact, I'm a little worried now that I even know that it exists. If I try it, I know I will gain 10 lbs. :-P Too easy, far far too easy...

this is soso good and soso bad..i wish it wasn't so easy to make...but it's very easy to play with. I never have cocoa or carob powder so i just add some instant coffee, cinnamon and anythign else i can think of and voila...kille cake...thanks again*!~ ::)
