Question about amazingly easy big bread recipe

There are way too many comments to sort through, but I was wondering if anyone has ever tried a gluten free version of this recipe? It used to be my favorite bread.

As soon as I get more yeast, I'll be experimenting with it. It seems like a perfect recipe to convert to gf since there isn't much mixing, which translates to a lighter product. I'll keep you posted!
