Banana barley bars
They are wholesome, tasty, crunchy Grape Nuts cereal bars made with no oil, flour or sugar. This simple recipe combines the cereal with banana, peanut butter, agave with touches of cinnamon. The last time I made them I used half Grape Nuts cereal and half rolled oats and they came out great. The 8"x8" pan I pressed them in fit in my toaster oven. I've made these several times. Cut them into bars and stored them in a Ziploc bag in my freezer so I can just take one to work in the morning. (saskia)
Banana fritters
These are meh. An easy, quick way to use ripened bananas, but I'd prefer a healthier version. I halved it for 2 bananas, and made 5 fritters. They taste like banana, and the texture is just...ok. They are better with the maple syrup, but probably not something I'd make again. (AC)
Banana oat morning fuel
Great-tasting smoothie that is a filling and nutritious energy boost. This delicious drink is a blend of bananas, oats, peanut butter, nondairy milk, vanilla, cocoa powder and agave or maple syrup. I used organic vanilla rice milk and left out the agave/maple because my banana was super ripe and plenty sweet. The peanut butter enhances the taste of the Banana Oat Morning Fuel without being too strong. Fast and easy to make. I also like that the recipe was for made for one person. (saskia)

Nice! A great, basic recipe and then you can add whatever you like, that's my kind of recipe. I've tried two of the variations and both of them turned out great. When I made the tofu mixture I thought it would become too dry with 1 cup of chickpea flour, but it wasn't dry at all. Once I had given it time to set (the recipe says it takes 10 minutes, I waited longer) it held together better than any other eggless frittata I've made. (eldsjal)

Not quite a fail for me, but definitely not the best. I followed the recipe (except heating skillet to really hot-I'd never do that for pancakes, they don't get done in the middle), and they were eh. The batter is not that thick, but the pancakes are too thick. They are thick, but not fluffy. Kinda dense and tough. I did get 6 smallish pancakes. Won't make this recipe again. (AC)
I tried them again and was surprised that I even liked them the first time around. It's a bummer because I wrote a review praising them but now I'd like to delete it! I made them so long ago I don't know if I made any modifications and just didn't write them down. Oh well. (intheend)

Peanut butter and chips granola
This did not turn out so well for me.  After the first 8 minuntes of baking, I went to stir it all around and it was already burnt.  I have an oven thermometer so temperature was not the problem.  I tried to pick some of the middle (non-burnt) pieces out and they tasted alright.  Not the greatest recipe IMHO. I really liked this a lot. I didn't use any chocolate chips...I used peanuts instead...super good if you like peanuts! It's really good sprinkled on soygurt. (dannibazaar)

Another winner.  I used chunky PB and the texture was great.  DH wolfed these down in one day!  I halved the recipe and then used the batter to make 4 big muffins instead of 6 regular ones.  Will definitely make again! (icephrosty)
Pumpkin carob muffins
I substituted the carob for cocoa powder and chocolate chips in this recipe. I ate one warm right out of the oven and wasn't totally wowed by them, wishing I had baked the pumpkin muffins in Vegan with a Vengeance instead. But then I had one the next morning and was pleasantly surprised by the marriage of chocolate and pumpkin flavors in this moist muffin! The recipe is also low fat(only 1/4 cup oil for a dozen muffins), low salt and calls for agave instead of dry sweetener. I used part agave, part date syrup. Great muffin. (saskia)
These tasted weird. I like the taste of both pumpkin and carob individually, but together...bleck. I tried letting them sit for a day to see if the flavours would meld or something but no...still bad. (dannibazaar)
Quinoa raisin muffins
Not your traditional muffin but very, very good. This meal muffin is packed with protein and peanut buttery goodness. Tastes like a chai-spiced peanut butter cookie in muffin form. Dense, sweet, moist with touches of vanilla, cinnamon, ginger and nutmeg and sweet plump raisins. Batter is thick. I scooped it evenly into muffin tins with an ice cream scooper. Muffins only rose a little. Only problem with this recipe is that I don't know why the author didn't put "peanut butter" in the title since it's the dominant ingredient. Overwhelms the quinoa. But I'm not complaining though because I just really love peanut butter.  (saskia)

Sesame bean spread
This recipe as written does not work. There's not enough liquid, so it's just chickpea crumbs. I added a full other lemon's worth of juice, some more sesame oil, and some water to get it to the correct consistency. There is also too much garlic for such a small amount of dip. It tasted primarily of raw garlic, with a bit of sesame oil. P liked it more than I did. Blah. Would not make again. (AC)
a simple chickpea and sesame oil spread. Loved it. I used a low sodium can of chickpeas, so I added some Maggi Sauce which was genious and made it awesome.  I ate the whole recipe alone in one sitting for my main course alongside the soup.  It screams for the addition of something like Maggi, Braggs or soy sauce in my opinion. Very good! But I added a bunch of stuff because I thought it lacked some oomph. More spices, more nooch, more miso, a tablespoon of tahini, lots of tomatillo sauce, a little ketchup and mustard and salt. Really liked how it turned out. Used it as a taco filling and it was awesome.  (eldajal)
Zucchini white bean spread
Pretty nice. Nothing spectacular going on, but good. I liked it more the more I had of it. Don't know if I'll make it again, but I'm glad I tried it. I salted the zucchini and pressed out the water before mixing it with the beans. I also used big white beans instead of cannellini. (eldsjal)

Just so everyone knows, these are not Cheez-Its. If you love nutritional yeast like I do, then you'll like these. Making them as directed, they don't really crisp up like crackers. I had much better luck rolling them out even thinner. Then after cooking for about 12 minutes, I flipped them and cooked for another 8 minutes. They were actually were actually crispy this way! Yay! This will be a fun recipe to play with. I want to try them with cayenne or smoked paprika next. (kristinv)
Chili roasted peanuts
Followed the recipe, but didn't have Spanish peanuts. Pretty good. A nice little snack. I think it's a bit heavy on the cocoa powder, and needs more heat. (AC)
Curry couscous stuffed mushrooms
I made these mushrooms to accompany the roasted Romanesco & Brussels sprouts. The were rather a disappointment and I will not make them again. I like the idea but there's something missing and I just can't figure out what it is. Mango chutney? Ginger? More salt? It was way too much couscous for the mushrooms (8 oz = 12 medium cremini mushrooms). Note: I followed the instructions for preparing couscous on the package, not the 500VR recipe, which means I mixed the dry couscous with dry herbs & spices, added water and let it rest for 4 minutes (covered). Sauteed onion, garlic and mushroom stems in separate skillet. Then I added the 'finished' couscous to the onion mixture. According to 500VR I should have sauteed the dry couscous & herbs/spices with the onion mixture, adding water and stirring till all liquid has evaporated... Of course it could be that would have made the flavours come out better (esp. curry & garam masala). But as far as I'm concerned, it's not worth giving it another chance. (gnoe)

These needed to bake longer than suggested so they wouldn't be so doughy inside, but I loved them with the chipotle ranch dressing.  On their own the flavor is good, but not anything too exciting.  I really love tamales so I was looking forward to getting the taste without all the work and these did a decent job of that. Good easy and quick dressing for a salad.  It took me three tries not to burn the mustard seeds and toast them properly, but that's because I'm a ditz and don't pay attention.  I cut down the amount of agave nectar from 3 tbs. to 1 because I like spicy better. (tweety)

Not my favorite dressing. It's ok. After adding some more salt and pepper, P liked it more than I thought he would. He's not a fan of vinegar dressings, but said it was pretty good. It's pretty basic, but didn't surprise me. Not something I'd make again. (AC)

I'm not sure about this as written. I think it would still be ok and refreshing, but I added some tomato, splash olive oil, and agave. Light and tasty! P even commented how he liked it despite not liking cucumber. (AC)

Good.  I used purple carrots that I got from my CSA, so the color is not appealing.  I think a cup of mayo is a bit too much and I did cut down.  Perhaps my cabbage was too small because it still seemed t0o "mayo-ey" to me.  I used raw pumpkin seedsd instead of sunflower seeds, and I didn't have any raisons and didn't want to buy any so I used some dried cranberries I had on hand, and it worked well.  (tweety)

Very good.  This is a simple easy to prepare vinegrette.  I spaced out thinking I had some toasted sesame oil, but didn't and used chili oil instead and it was still good.  I did not have lemon zest but used lemon pepper.  Forgot to add the sesame seeds after chilling, and used red mustard greens instead of kale.   It's pretty standard fare and I've made similar dressings many times from other sources. Another mini-rant though.  She calls for "seasoned rice vinegar".  Seasoned with what?  There are several varieties of rice vinegar at the store, not that I would buy anything but plain.  Again, it would have been nice not to take the lazy route, but include what seasonings an experienced cook could have used to create seasoned vinegar. Barley chili
a thick, hearty, flavorful chili with lots of bulk from barley, black beans, chopped carrot, zucchini and onions. I kicked up the spice level with more chili powder and cumin. Since the barley dominates the chili texture, I added a can of drained pinto beans and a half a can of undrained corn. I love barley but I think next time I'll only add 1/2-3/4 cup, instead of a full cup, so it's in balance with the beans. (saskia)
I enjoyed this.  It's pretty basic chili seasonings, nothing unique or imaginative here.  The use of barely is a good idea for something diffferent.   Stealling an idea from AC above, I used mushrooms instead of zucchini because mushy cooked zuchinni is unappearling to me. (I like it a bit crunchy and stir fried).   I used fresh hot chili instead of cayene, and I used the veggie broth option instead of water. (tweety)

This was good! Solid minestrone. Had it with Daiya grilled cheese on wheat buns, and it was a great meal. I made a few minorish mods-red bell pepper for green, some mushrooms instead of zucchini, and some tomato puree. I thought cayenne pepper was a weird addition for minestrone, so I used red pepper flakes. I added a few too many (bit too spicy), so I threw in some dashes of tarragon vinegar to sweeten it a bit. The flavor is great, veggies are good, good spice. (AC)

I liked this soup but think it could use a little tweaking.  Next time, I will add more veggies and cook longer.  The beans were still a little hard after 2 hours of cooking.  I used smoked paprika instead of liquid smoke, but the flavor definitely came through. (icephrosty)
I am really enjoying this soup, with some modifications.  It seemed quite watery to me even after a few hours of simmering so I pureed it a bit to thicken it up.  Next time I might add a cup or so less of water.  I also used smoked paprika, cut the liquid smoke in half, and added a little vegan Worcestershire sauce.  It makes A LOT of soup.  It could use some extra veggies but it's a good soup I'll probably make again. Spicy gumbo z'herbes
This turned out amazingly. I've been hungry for gumbo for a while, but this recipe [i[seemed like it might fall short. I did make a few modifications. First of all, 1/2 cup oil in a soup is a TON. So, I cut the roux down by half, and I should have cut the liquid more. I like the soup the consistency it came out, but it should have been thicker for gumbo. I used carrot for the celery, kombu for dulse, and Cajun seasoning instead of file (totally different thing!). Nevertheless, my version was so surprisingly good. Oh, I also added corn. I was thinking the roux would make the soup weird, but I do think it's a special flavor. Yummy, yummy. Served with rice, and will make again. (AC)
Split pea soup
A hearty, smoky split pea soup with a hint of rosemary and dry white wine (optional) to enhance the broth. This soup is sure to please vegans and non-vegans, especially those who like a split pea with ham because it uses liquid smoke and  imitation bacon bits. I think next time I will leave the bacon bits out. The recipe, which I made in a slow cooker, will still be very flavorful without them.   (saskia)
This is one of my favourite recipes in this book and I make it all the time. It is simple, delicious, and I can actually get my little sister to eat vegetables this way! I seriously make it once every two weeks or so. It never lasts very long! (dannibazaar)

Tahini miso potato soup
I'm not sure what kind of sweet potatoes the author used, but all I ever see in the grocery store huge.  I think the recipe called for 6 sweet potatoes, plus some regular ones.  I used 4 large sweet potatoes and 3 medium red potatoes.  This was not my favorite soup...not even my favorite sweet potato soup.  I did not like the sweetness of of the sweet potatoes with the miso.  It was just weird to me.  If I make it again, I will use regular white or red potatoes.  Also, I added some chopped kale at the end instead of frozen spinach.  Ftr, Cams thought it was good. This was good, especially the leftovers. But there was something missing, I'm trying to figure out what... Maybe mustard to make it more cheesy? I will make it again sometime and try adding a tablespoon or so of that. And maybe also not use quite as much potatoes and fresh onion instead of powder. Mac and sleaze
I tend to dislike all vegan mac n'cheeses but I'm out of groceries and needed something for dinner. I threw in some frozen mixed veggies and was surprised that I found this dish decent. Making the cheese sauce is painless and it was alright but I felt like something was missing. Like I said, I'm not to be trusted for Mac n cheese reviews but the only thing I was really into was the panko bread crumbs. (intheend)
Maybe if I would have used the soy milk instead of water I would have achieved the creaminess I desired from this dish, or maybe I should have added the extra pasta cooking water as suggested in the recipe, but it ended up a bit dry.  The taste was good and comforting, but the texture bothered me.  My husband loved it and stuffed himself with it. Very good! I made a few mods. I used 12 ounces of spaghetti, about 3/4 cup nooch, some daiya, and more pasta water. The recipe makes way too much topping for an 8x8' casserole..especially for 8 ounces of pasta. I guess if you want a lot of breadcrumbs, it's good...but too much for me. I think the combo of (more) nooch and a bit of daiya is really great! Good combo of spices in this. (AC)

I'd never had quinoa before I made this, but I really liked it! I prepared it the day before to let the flavours meld together, and then we ate it cold with spicy chickpea burgers, guacamole and jalapeño-corn-gravy. Everyone enjoyed it, and we ate the leftovers for days. (eldsjal)
I made this with millet, and it was very good! Flavor came together more than expected, and it was excellent with avocado on top. (AC)
Moroccan spaghetti
Completely delicious. I really enjoyed the raisins in this dish. The seasoning was spot on and that says a lot considering I hate cumin but enjoyed it in this dish. There were a lot of different textures from the spaghetti, chickpeas, etc and that's what really stood out to me about this dish. I will definitely make this again. (intheend)

I agree with berryraw. These did take forever to bake..even longer than stated (55 minutes). I wasn't expecting to be that impressed, but the flavor is very good. The rosemary is not prominent, but everything is balanced. (AC)
Spicy frites
I'm a sucker for roasted potato spice combos. This was a new one for me since I don't think I've ever even had garam masala before! Luckily, my spice dealer erinmonster sent me some, so I tried these. Pretty good! A little sweet. I didn't taste a whole lot of the spices, so I would up them more. Good in mustard. (AC)

I'm always disappointed in my fried rice. It's never how I want it to be, and this was no exception. I thought maybe the simplicity might be the way to go, but eh. I didn't make the sandwiches, because it's odd to me to have a seitan sandwich (bread on bread?). I was annoyed while making this, because the directions are quite vague, and I'm not a seasoned seitan maker. A "dice" to me is not really small, and I feel like the onions need to be really small for the dough. It was odd trying to get them all kneaded in. There's no time for kneading, so I just took as long as needed to form into a ball. Most of my liquid never absorbed even with cover off, so I didn't use a lot. I did make a few changes in terms of flavor-BBQ sauce for steak sauce, ketchup for paste, and yellow mustard. I think the seitan or broth could use some soy sauce for salt. I wasn't very pleased when I tried the seitan after 30+ minutes, but after chilling several hours it's really quite good. The texture is firm and kind of chewy. My 2nd best seitan (first good seitan with just boiling). I crisped it up in a pan. Mine wouldn't shred as the recipe states, but I didn't need that. Overall, good, but it does need more flavor. More BBQ sauce, more flavor over all. I'm not disappointed, but not extremely happy with the actual recipe. (AC)
Meh....what onions didn't fall out during the kneading fell out during cooking...I don't think adding chopped onions to the seitan was a good idea.  The bbq sauce was way too sweet for me...the writer asked for 1/2 cup of packed brown sugar.  I'm not sure what the writer means by pulling it apart with a fork...I know they are going for the shredded beef idea, but it doesn't work, or didn't work for me.  It made a huge amount.  (tweety)

This pretty much sucked for me. I followed the recipe, but it was so wet, I added some more VWG. I also added close to 1 tsp salt instead of 1/4. It looked promising after baking, but was just like a bready loaf with blandish (not ham!) flavor. Not nearly salty or smoky enough, and I used the 1 tsp liquid smoke. I ended up dicing it and crisping it up with some bragg's, liquid smoke, and nooch, but it's still just very meh. Did not like it at all. (AC)

Awesome. I don't usually like TVP, but this is just great. You can make a big batch on the weekend and use it all week, with everything. So awesome! Why did I wait so long to make these? Very simple and easy and fast to make. The cheesy salsa was to die for, I think you could stuff the chimichangas with pretty much anything as long as you cover it with that sauce. This was better than expected. I've often been let down by baked eggplant things, because fried eggplant is so good! I salted my eggplant, and used almonds instead of walnuts. I made my ranch dressing from this website and just added a chopped chipotle pepper and a few spoons of adobo sauce. Once you stuff it in the poblano and bake it, it ends up being divine! I poured the enchilada sauce (made from this book also) over it and devoured it.  (intheend)

We eat Tofu Marsala at a local restaurant and I have been looking for a good recipe to make at home.  This was pretty good, but I would tweak it a little next time.  First of all, I used shiitakes and let the tofu simmer in the mushrooms and marsala for much longer than indicated, probably 20-25 min on each side.  The tofu still had a bit too much alcohol flavor, so maybe I should have either simmered a little longer or simply reduced the wine.  I've seen tomato paste used in some marsala recipes.  I think that may be a good addition to this sauce.  I will probably try that next time.  (lotus)

These are good. P wasn't impressed, because he thought they had too many mushrooms, but I didn't think that at all. I'm surprised that he thought that, but he said they were "overpowering." I used a green pepper instead of red, and small flour tortillas (maybe just a tad bigger than corn). I wanted to make the nutty cheese, but I've never had agar. I used rotel for the jalapenos on top. I wish I had olives, but didn't. I also added 1 zucchini to the filing. I was tempted to add chili powder to the veggie filling, but resisted, and liked it. I think they are good enchiladas, and recommend adding the zucchini. (AC)
This was very bland. The only thing that tasted anything was the enchilada sauce and I didn't even like that sauce very much. I made the mistake to not taste the refried beans before adding them, so the filling tasted pretty much nothing. For the cheese, I used a homemade block of cheddar cheese that I crumbled, and it was ok. If I made these again I think I'd use a cheese sauce instead. But this took a lot of time and effort to make and I don't think the end result would be worth it even if I made it spicier. I'll just stick to the chimichangas. (eldsjal)

Divine!! This was a big time omnivore approved recipe. It was made from three recipes which were pizza dough, Bechamel sauce, and Oven Smoked Tofu. The oven smoked tofu was so good I even used it in sandwiches and ate some as a snack. The bechamel sauce was good but you definitely have to use it as soon as possible because it just becomes this weird mix of butter and flour. The pizza dough was great also but a pain to roll out because of the gluten. I'll stick with my own pizza dough next time.(intheend)

It is sweet and soft and fluffy.  However, I have never made such a mess with bread before and I almost trashed it.  I mixed the wet ingredients into the flour and it was WAY too wet.  I must have added a cup more of flour and still couldn't even knead the dough.  It was a sticky, frustrating mess.  I calmed my emotions though and decided to just throw the bowl over the glop  and wait to see what happened.  It rose tremendously!  I punched it down a bit and decided to just hand form it on a baking sheet instead of loafing it.  It was easier to work with then.  I'm glad I didn't give up on it, but, wow, what a mess! I subbed agave for the 1/4 cup of maple syrup, but otherwise followed the recipe. Well, I can't remember what flour is used, but I had AP. I did have to add about another tablespoon of milk to make a good dough. I was not expecting to love these, because I wasn't pleased with other agave cookies, but these are great! There's no coffee flavor, which seems to be the case with most espresso recipes (only 2 teaspoons used), but the orange flavor is good (not too strong), and the texture was fabulous. They were an exceptional kind of chewy, with a bit of crunch. I think the 14 minutes baking is perfect, and I did get 12 cookies. I would add less than 2/3 cup chocolate chips/chunks, because I could barely get 1/2 cup incorporated. P loved them, as well. I think the whisking in of the raw sugar to dry ingredients (as opposed to with wet) helps with the nice texture. (AC)

I used raspberry lemonade and tofutti brand vegan sour cream in a graham cracker crust. It took a bit longer than I expected to create the condensed milk, but it was a simple recipe. I could hear my husband downstairs saying "MMMMMMM" loudly as he had his first bites of the pie. It's absolutely delicious and perfect for hot weather. It's not too tart, not too sweet- just right. Since our weather gets above 110 degrees this time of year, I expect this will be on frequent rotation. I'd give this recipe an A. If you're looking for a satisfying dessert for hot weather, try this one immediately. (bellybellygood)

Holy crap these are amazing! I omitted the margarine completely and used unsweetened chocolate and used only 2/3 cups of sugar rather than 3/4 cups (half brown sugar and half white). They're a great combination of fudge-y and cake-y. They're so nice and dark...definitely one of my favourite brownies that I've made. The texture is also surprisingly nice, not all crumbly like other things that I've made with brown rice flour. I would like to document my sister's reaction. So I was just like "Hey, I made brownies if you want one" She responded by saying she was still full, maybe later. I said "try one they're really good! Like chocolate heaven only better!" So she obliged, took a nibble, went all wide eyed, said "ohmygod yum" and shoved the whole damn thing in her mouth. It made me laugh. (dannibazaar)

When I was making the batter for this I was tripped out by how bread-like it was. I double checked the ingredients list to see if maybe I missed where it called for milk but I didn't. It rose nicely in the oven but when it came to flip it, the bottom was a hot mess! I let it bake for 28 minutes and my toothpick came out clean but it was completely gummy at the bottom. This was such a bummer too because the taste of the cake is down right decadent. (intheend)

exceeded my expectations. They're not your typical super sweet chocolatey brownie. But they are quite tasty, flourless, healthy and easy to make. The brownies are an interesting blend of black beans, bananas, oats, coconut, carob powder and nuts. The dates, agave and raw sugar add just the right amount of sweetener without giving you a sugar rush when you bite them. The coconut complements the brownies well so the banana doesn't dominate the flavor. The brownies taste great chilled, right out of the refrigerator, with a glass of almond milk. (saskia)

I followed as directed except for one thing - I didn't make the caramel sauce recipe. Instead, I just drizzled some brown rice syrup over it. Turns out - probably not the best idea. The syrup melted too much when it baked, and when it came out of the oven, the whole top of the dish was kind of swimming in melted syrup. Bah. After it cooled, I tasted it and I couldn't really taste any of the banana layer. I stuck it in the fridge and tried it again the next day. Much better the next day! The omnis I served it to loved it. So I think it was a success. But don't make my lazy mistake - make the caramel sauce! It probably works better than brown rice syrup!  (lebkuchen)

OMG, I love this cookbook.  It's my current fav  :)

Peanut butter pancakes - These are AWESOME.  The batter came out really think but I didn't add any extra liquid because I wanted them to be dense.  Great PB flavor.  Two thumbs up!

Peanut butter muffins - Another winner.  I used chunky PB and the texture was great.  DH wolfed these down in one day!  I halved the recipe and then used the batter to make 4 big muffins instead of 6 regular ones.  Will definitely make again!

Smoky black bean soup - I liked this soup but think it could use a little tweaking.  Next time, I will add more veggies and cook longer.  The beans were still a little hard after 2 hours of cooking.  I used smoked paprika instead of liquid smoke, but the flavor definitely came through.

I recently made the Banana Barley Bars. They are wholesome, tasty, crunchy Grape Nuts cereal bars made with no oil, flour or sugar. This simple recipe combines the cereal with banana, peanut butter, agave with touches of cinnamon. The last time I made them I used half Grape Nuts cereal and half rolled oats and they came out great.

The 8"x8" pan I pressed them in fit in my toaster oven. I've made these several times. Cut them into bars and stored them in a Ziploc bag in my freezer so I can just take one to work in the morning.

Peanut butter and chips granola - This did not turn out so well for me.  After the first 8 minuntes of baking, I went to stir it all around and it was already burnt.  I have an oven thermometer so temperature was not the problem.  I tried to pick some of the middle (non-burnt) pieces out and they tasted alright.  Not the greatest recipe IMHO.

Macadamia granola - This was good but I have a sweet tooth and had to add 2 Tbsp of syrup to get it where I like it. I also made it with walnuts since I didn't have macadamias.

Buttermilk pancakes - My go to pancake recipe. These are just divine and very easy to make. However, they don't make a lot so make sure you double the recipe if you want good size pancakes.

Spicy Asian Macaroni Salad - This sounded really odd but when I made it everyone was talking about how good it was. Definitely give this a shot if you want to try a different type of salad.

Cinnamon bread - Loved this! It was really easy and fast to throw together.

Apple Sage Fauxsage - This was this the first thing I made when I bought the book and felt that this recipe was worth the purchase alone! It's perfectly seasoned and I loved the texture.

Maple and brown sugar cookies - These were just okay for me but I would make them again and maybe add some more sugar. It's always more sugar for me, lol.

Chili and cornbread pie - This was inedible. The cornbread topping was perfect but the smoked paprika is just too overwhelming.  I would recommend adding only about a tsp or even less. I would make it again with that revision though.

Red Jambalaya - This made a huge pot! My family and I ate some for days. It was very tasty though.

Meatloaf - My omni family and I enjoyed this immensely. However, it was a little dry on the inside so I think next time I would rehydrate the TVP with 2 cups of "beef" broth to see if that would help.

Mashed mustard potatoes - Liked these a lot but only used 2 tbsp of mustard instead of 3. I liked it better that way because you could still taste the mustard but it wasn't overwhelming.

White pizza - Divine!! This was a big time omnivore approved recipe. It was made from three recipes which were pizza dough, Bechamel sauce, and Oven Smoked Tofu. The oven smoked tofu was so good I even used it in sandwiches and ate some as a snack. The bechamel sauce was good but you definitely have to use it as soon as possible because it just becomes this weird mix of butter and flour. The pizza dough was great also but a pain to roll out because of the gluten. I'll stick with my own pizza dough next time.

Morrocan Spaghetti - Completely delicious. I really enjoyed the raisins in this dish. The seasoning was spot on and that says a lot considering I hate cumin but enjoyed it in this dish. There were a lot of different textures from the spaghetti, chickpeas, etc and that's what really stood out to me about this dish. I will definitely make this again.

Barley Chili is a thick, hearty, flavorful chili with lots of bulk from barley, black beans, chopped carrot, zucchini and onions. I kicked up the spice level with more chili powder and cumin. Since the barley dominates the chili texture, I added a can of drained pinto beans and a half a can of undrained corn. I love barley but I think next time I'll only add 1/2-3/4 cup, instead of a full cup, so it's in balance with the beans.

Jam Filled Soda Rolls - These were pretty bland. They might have been better had there been something added in the dough like nuts or something. I've had many a better muffin.

Crunchy carob almond granola - I used cocoa since I'm not a fan of granola and really liked this. It has been the best granola I've made at home.

Mexican shepherd's pie - Freaking loved this!! I used the red seitan recipe from viva vegan and also used the red chile sauce from viva vegan. It was like a huge tamale pie.

Cherry pistachio scoffins - I had such high hopes for these but unfortunately, they were just hopes. After being baked, these are extremely dry and bland. They ended up being thrown out.

Orange chipotle BBQ - So delicious! But it was too spicy for two members of my family so if you have problems with spiciness, knock the chipotle down to 1 tbsp and you should be fine.

Imitation bacon bits: Awesome. I don't usually like TVP, but this is just great. You can make a big batch on the weekend and use it all week, with everything. In tofu scrambles, with pasta, in salads, in burgers and sandwiches etc etc. I add about two tablespoons of soy sauce and a little ketchup, but it's not necessery.

Mexiquinoa: I'd never had quinoa before I made this, but I really liked it! I prepared it the day before to let the flavours meld together, and then we ate it cold with spicy chickpea burgers, guacamole and jalapeño-corn-gravy. Everyone enjoyed it, and we ate the leftovers for days.
