Which recipe do you suggest that I should make for lunch?

It has to be a simple recipe because I don't work at home, therefore I would be taking this to lunch during classes and so it has to be a simple lunch which I can pack! :D

I'm working on the same question myself, but over the summer I worked in a different state from where I live, and so I would bring my lunch with and here were my basic ones:
pb&j with various sides
canned vegetarian hormel's chili (very very good, but also very processed)
If you have a cool place to store it at your disposal, chips and bean dips or such are also fun.

Chickpea Curry Sandwich I would pack the sandwich spread and toppings on the side and assemble it when u want to eat it!
And not to toot my own horn or anything: Vegan Taco Soup if you have a microwave... I love this soup and make it every week... I add TVP now (when I add all the beans and stuff) instead of the burger crumbles and saute the onions and garlic in water making this a low fat dish! This would be leftovers for a whole week :)
pb&j is good... as well as a pre-made sandwich with peppered flavor tofurkey "lunch meat" and your favorite toppings
pasta salad such as Southern Macaroni Salad would also be good or cold pizza (if you don't have a microwave) with vegan ranch such as Awesome Vegan Ranch... i don't know where you live but papa john's and little caesars have some yummy vegan crusts (not thin crust)... at pizza hut and dominos u can only get thin crust... or you can just make your own pizza
I bring all kinds of leftovers to lunch - stews, chili, soup, pasta dishes - you name it. The one that gets me the oddest looks from my colleagues is vegan sushi. :-D
