Southern Macaroni SaladIngredients (use vegan versions): 4 cups of uncooked macaroni noodles
1 cup vegan mayo
2 tablespoons vinegar (any kind will work)
1/4 cup dijon mustard
1/3 cup of sugar
2 teaspoons salt
2 teaspoons pepper
2 stalks of celery
1 carrot
small-medium sized onion
Directions:Bring the pasta water to a boil and cook the macaroni for about 8 minutes or until al dente. Rinse, drain, and set aside.
Whisk the vegan mayo, sugar, vinegar, dijon mustard, salt, and pepper in a large bowl. Finely dice the celery and onion and add it to the bowl. Grate the carrot in the bowl and mix well. Add the drained macaroni and combine. This is best left in the fridge for 24 hrs before serving.
Serves: a large group
