Thanksgiving leftovers!

I know you all have them. What is everyone doing with their leftovers?

I think i'll make a pot pie with my tofurky. Mmmm.

Inevitably I end up with more stuffing leftovers than anything else.  So I cut up a little bit of the SoySeiTurky leftovers an add it to the stuffing to make a more rounded main dish.  Its yummy.

If you just have leftover Tofurky or seitan make a Turky ala King!  My mom would always do this and its just a simple saute of onions, seitan, and veggies of your choice drenched in some homemade creamy mushroom soup and served with biscuits.  This can use up those leftover crudites you nibbled on yesterday as well as any extra soup you made for green bean casserole! heh

i just eat it cold out of the container/dish that i made it in.  save some dishes.  mmm.  cold awesome loaf.

Last night we layered stuffing, then stir-fried carrots, celery, and mushrooms- covered that with I Can't believe it's vegan gravy. Then covered that with a mashed potato layer on top sprinkled with french fried onions. Baked at 350 degrees for about 30 minutes. It was ridiculously good!

amy that sounded DELICIOUS! since i went home for thanksgiving, i didnt bring any leftovers with me back to school, sooooo.....i dont get yummy leftovers :[ BUT i really hope my mom doesnt throw away the vegan banana bread she made me, it was SOOOO good!

  I made soup and created "stuffing dumplings" out of the leftover dressing. Made regular dumpling batter that was half dressing and dropped them on top of the simmering soup. Excellent!

The leftover homemade chunky cranberry sauce I will add to an apple pie.

I used some of the leftover chunks of sweet potatoes in my black beans and rice last night.

I make "holiday burritos": mashed potatoes or sweet potatoes spread on the tortilla like you would with refried beans, then fill the tortilla with leftover veggies and stuffing.  Then bake the burrito and serve with "salsa" (cranberry sauce or chutney) and "sour cream" (leftover gravy).  YUM.

Yum that cranberry apple pie sounds absolutely delicious! If anyone has leftover cranberries from Thanksgiving, try out this Spinach Salad with Pears and Cranberries recipe from our site!

Spinach Salad with Pears and Cranberries

    * 1 teaspoon finely shredded orange peel
    * 1/2 cup orange juice
    * 1/2 cup seasoned rice vinegar
    * 1/3 cup dried cranberries
    * 3/4 lb. firm ripe pears
    * 3/4 cup thinly sliced red onion, rinsed
    * 1 lb. package O Organics™ Baby Spinach

1.
To make salad dressing, combine orange peel, orange juice, seasoned rice vinegar and dried cranberries.

2.
Core and thinly slice pears; add pears and onion to dressing.

3.
Just before serving, pour dressing over spinach and toss gently.

Per serving: 76 cal., 5% (4 cal.) from fat; 2.1 g protein; 0.4 g fat (0 g sat.); 18 g carbo (3 g fiber); 344 mg sodium; 0 mg chol.
