how to make breaded/fried stuff CRISPY!

I am new to this whole cooking thing, and I want to make some vegan CRISPY cutlets, either seitan or chickpea based.
so what is the secret? bread crumbs? corn starch? something else!?

hot oil
make sure the coating isn't too wet
also try cornflakes if you want'em to be extra crispy
Bread crumbs do make crispy cutlets but nothing beats a coating of semolina/rice flour and then shallow fried in oil.
Take care not to burn them.
I've had best results with flour/cornmeal mixtures when it comes to crispiness. Like hanashi said, make sure the oil is hot when you put them in.
Also, the recipe for the batter for onion rings on here (i think its called better than sonics onion rings, not sure) I've used it for coating things, and it turned out very crispy!
deep fryer... unhealthy but everything turns out awesome... i love panko bread crumbs they work good
Make sure you have your oil at the right temp - too low and the batter will absorb the oil and not crispify, and too hot it'll burn before the inside can get heated. They sell candy/oil thermometers for that business, and mine works great.

I second the rice flour. Gram flour (chickpea) works well too.
